Apparently the owner was at Oud Sluis until their closure. moving back to the home area with a childhood friend they opened Coulisse. Many other restaurant people recommended this place so we had to go. A single seating with a single tasting menu (with a few supplements) is the base for a very cool restaurant in an old theater entry way. I guess the stage belongs to another company? There are Japanese, New Nordic and some very other creative touches to this modernist menu. The beetroot with coriander and sichuan peppercorn maybe one of the best beet dishes I've ever had. the staff are small but friendly, and they are super knowledgeable on the wines and menu.
