Purtroppo erano pieni e non c'era niente per noi. Abbiamo prenotato e il giorno dopo siamo tornati e capito proprio perché erano così pieni. Hanno poche tavole, pochi camerieri ma quello che sono in grado di preparare in cucina è una cosa stupenda. Fanno slow food. Cucinano quello dei pastori e contadini. Carni, formaggi, varietà di farine, dolci a base di formaggio, miele, mandorle. Abbiamo ordinato un bel vino rosso consigliato dal nostro cameriere e iniziato con un una specie di formaggio grigliato al miele e il millefoglie di pane carasau con le verdure fatto col pane sottile sottile tipico sardo. Diciamo che già con un antipasto del genere c'hanno portato oltre. Come primi abbiamo preso ovviamente i colurgiones - freschissimi, buonissimi, con la menta che ti rinfresca il palato e la ricotta bella ariosa e fresca e anche il cous cous sardo - che meraviglia. C'è sempre posto per il dolce quindi abbiamo deciso di assaggiare i ravioli allo zafferano - fritti, soffici e buonissimi. Come digestivo abbiamo preso il mirto ed era bello carico e buonissimo. Che posto stupendo per cenare, mamma mia. È stata un'esperienza culinaria indimenticabile. Abbiamo provato tanti piatti tipici sardi in maniera molto elevata ed elegante in modo che non ci dimenticheremo mai di questi piatti e sapori sardi che ci siamo riportati dalle vacanze. Il bello è che ci sono opzioni vegetariane (e anche senza glutine se serve a qualcuno). Aggiornamento: riapre il 1 Aprile 2025 - chiuso per stagione.

From our table we could see nothing but sand and sea and the glorious Nora lagoon. The service is very good -- you are welcomed and cared for by a team that is clearly passionate about the restaurant and takes great pride in attaining the only Michelin star in southern Sardinia. The restaurant itself is nearly perfect with one crucially important exception: the food. The menu is relentlessly creative. The courses are meticulously prepared. There is story behind each one. But while it may be fascinating to have raw cuttlefish mixed into your ricotta cheese, the important question is how does it taste? The answer: just as strange as you would expect. The dessert was presented brilliantly inside a crab shell. But do you want crab (mixed with pearls of pear) for dessert? No, you don't. Some of the courses tasted great (that baked oyster was amazing; I would have loved more than just one solitary oyster). The ember was the simplest course and also the best: it was simple filet of fish freshly caught hours earlier. I think Fradis Minoris has the potential to be one of world's greatest restaurants -- if they would lean more into Sardinia's rich culinary traditions. How the food tastes is, after all, even more important than the creativity of the chef or the stories behind his creations. One more note: I loved the wine list, packed with best wines Sardinia has to offer.
