The spice in the lamb chops is so good (so much so I ordered a full tray of these a few months later after buying her meals). And I am not a big fan of lamb chops either lol. Loved the garlic mashed potatoes. Perfect consistency of smooth with roughage from the potato skin. Her salmon and shrimp dish is literally chef's kiss. The sauce is sooo flavorful. I need to turn on notifications for the next meal drops. Her broccolini was so good. I am not a huge fan of vegetables but hers I could eat daily by itself. It's THAT good. Well seasoned and not overcooked. Her packaging is very sustainable to avoid spillage. She also delivered it to me within the promised time frame and she communicated with me throughout (when she was on the way and when she was arriving). For the full tray of jerk lamb chops I booked recently, she delivered within the promised time frame. Her delivery person recommended it went in the oven on low and she placed it where I wanted. Haelee takes care of her customers and the business isn't done once she receives your money. She follows up with you even after the event is over to ensure everything is to your satisfaction. I attended the pasta cooking class and I honestly did not expect to make three types of pasta. I was able to practice using the Kitchenaid attachment as well as a manual pasta roller which was great. After each meal we made, sitting down "family-style" was great because we were able to immediately enjoy what we cooked. We were very concerned because of Cordua's heavy South American influenced menu. My wife to be has a life threatening allergy to avocado and it seemed we couldn't hardly get away from it while looking at their menu. Marc Mann assured us that their kitchen staff was fully trained in allergy related food prep and anything and everything would be done to ensure no contamination. He also informed us that Cordua was a full house catering service and that they could prepare anything we wished, not just their set menu items. We proceeded but we were still wary of the allergy issue. We agreed upon a tasting menu and set a date. Marc met us at their Gessner location and we had lunch. The food of course was fabulous. All efforts had been made to ensure no contamination of avocado and we discussed the menu further. It became known to Cordua that my fiancé and I were VERY picky customers in addition to having an allergy complication. We knew exactly what we wanted, knew what quality food was and demanded the highest level of service. It was even noted in our paperwork internally for Cordua and their kitchen staff (Note: Very Picky Clients). We thought that was hysterical but we're glad they acknowledged and were making efforts to accommodate our pickiness. After one further concern about the allergy was expressed Al Deshon was brought into the conversation. He further assured us that with his personal oversight, our event would be attended to by his best staff. We were finally satisfied and pursued the contract. 6 passed canapés (2 of which were really rather more than a canapé) Three stations: Beef tenderloin and cracked potatoes with rolls Plantain crusted chicken sliders with roasted vegetables (like 6 veggies including green bean bundles) 3 different empanadas with walk away orange walnut salads Plantain chips and chimichurri All the service, ceramic plates, metal utensils, cloth napkins, cake service and all glassware for the bar. A final word on the food as quoted from one attendee... "this is not 'wedding food', this is 5 star restaurant food." I feel that says it all. We requested an additional server to attend to the bridal party alone. I cannot think of a more flawlessly executed event from their standpoint. The food was incredible, the professionalism of their staff was exemplary and the management of the services was without equal. Cordua rose to the very high bar we set and passed with flying colors. Every concern and special request we threw at them, they found a way to surpass our expectations. Special fold of napkins on the table, adding an additional server for the bridal party, use of some plating options they'd not previously offered, etc. Marc and Al were on site almost all night at our event. We never expected that. We will be recommending Cordua to anyone and everyone we can. Thank you Marc and Al, and a special thanks to Leo the attendant who was dedicated to Natalie and I the night of our wedding. There's a difference between receiving catering and being catered to.
