My girlfriend treated me to a vegan cheese making class today and it was so fun AND delicious! Chef Traci totally blew up all our expectations welcoming us from her beautiful Berkeley home. We got right into it after some introductions and made three different cheeses: cheddar, blue cheese and Parmesan, all cashew based and so good and fun to make! She provided everything we needed and we went back home with a cool mason jar full of each one of the cheeses! I just had a cheese bite with a cherry tomato, and it's just as delicious. A note about Chef Traci: she is Awesome. She loves teaching and sharing her passion for making good food and is not about her ego or anything like that, even though she's crazy talented, she is happy doing exactly what she's doing and it shows. I was in charge of planning a team event for about 18 coworkers. I came across Chef Traci, and she was helpful and so approachable in discussing our ideas. She suggested a Moroccan cooking class in her larger event space in Oakland. My husband and I took a cooking class with Chef Traci a few nights ago--he's trying to eat low carb and I'm just trying to eat a little healthier since I'm pregnant. Incredible!!! Traci was so welcoming and kind. Her Moroccan Chicken Tagine class was well structured, in our class of 7 people we all got to participate and felt very involved. We sat at the dinner table and prepped our chicken first then glazed some onions and put it all into the Tagine. She even offered us some appetizers while we waited for it all to finish up. What made it extra special was the little surprise she offered my boyfriend for his birthday! So thoughtful! Traci is great! Let me list some of the highlights: 1) She accomodated scheduling my group on late notice. This was a special occasion and she cared about that. 2) She took seriously all of our questions - from how to store spices to where to get produce - and really engaged in a deeper conversation about food. Lots of practical tips, too. 3) She also accomodated our food preferences. She converted the tagine recipe to vegetarian, and even added a head of cauliflower we brought. 4) She watched out for us. She made sure we had sufficient food and drink before the meal, and her kitchen is beautiful. We overstayed a bit the scheduled time, but didn't feel rushed to leave. I've had only one other experience w/ cooking clases - Kitchen on Fire. Traci is by far the better choice. YUM! Chef Traci welcomes people into her home for cooking classes. I have many food restrictions (gluten and dairy sensitivities, diabetic, and more) and am shifting to a vegetarian diet. I also have 3 (hungry) teenage boys in my house. I needed help figuring out how to do dinner for the family without cooking different meals for everyone. I contacted several chefs trying to find someone who could help. When I spoke with Chef Traci, she nailed exactly what I needed. She shared an idea of dinner as "common table" cooking, where the main menu items are mainly the same (marinades and sauces) with just switching out a few ingredients. For example, sweet and sour chicken for the kids was sweet and sour vegetables over cauliflower "rice" for me. They used the same sauces. And they tasted good! In addition, she provided cooking shortcuts such as doubling any sauces and freeze half for later. She also suggested alternative ingredients aligned what I can eat, like using monk fruit sweetener or coconut sugar to replace traditional sugar, as these substitutes have a lower glycemic index. On top of the menu challenges, my kids came with me to the cooking classes. While some people might hesitate having an 11-year old in the kitchen, she encouraged him to help cooking.
