Oxtails were tender, juicy, and full of smoky flavor.  I loved the flavor of the beef after being smoked for hours.  Great tasting oxtail. 2nd visit I ordered ala carte. Pork ribs were fall off the bone tender, juicy, and I loved the flavor.  I found out they use a mix of almond and red oak to get the smoky flavor without any bitterness. Chicken leg quarter had a ton of smoky flavor and there was a good amount of dry rub adding additional delicious flavor.  Chicken was tender and very good. So far the pork ribs and oxtails are my fav menu items here. 3rd visit I tried the beef ribs.  They were $10 each and I ordered 3 which was dinner size.  Beef was fall off the bone tender and full of smoky flavor.  These beef ribs are among my favorite in town. I found out they have 2 kinds of bbq sauce.  One is the Carolina style sauce with mustard and vinegar which I did not like.  I did like the regular one which had a little sweetness and a little smokiness.  You Chill We Grill Bbq is my favorite food truck.  Staff was very friendly and efficient.  There are a few tables and comfy chairs with a view of the freeway.  I tried to visit 2 other times but the parking lot was empty.  Best to call and find out what time they open before stopping by.  The menu changes a bit every week and sometimes the menu is posted on their instagram page.

The first time I had the "El Breakfast Sanguich" and on the second visit it was the "Brisket N' Gravy Sandwich" both came with a fried egg. The Breakfast Sanguich came with two smashed house made sausage patties that were absolutely delicious. Now all the rest of the ingredients were very good here too: the American cheese, quality brown egg, mayo, and toast brioche bun, but the sausage patties were king. So tasty indeed and with the right texture. Now if you thought that the breakfast sandwich above sounded great, get a load of this. The Brisket N' Gravy Sandwich was total bliss. It came with one of those delicious sausage patties, but also a terrific slice of brisket and a side of homemade sausage gravy. The fried egg came at a perfect run, and the broiche bun was very well toasted. This in combination with a perfectly prepared handsome slice of brisket and that sausage patty; well you get great levels of flavors and textures. By the way, the gravy comes on the side, so you have the option to pour it onto the sandwich or dine on with a spoon out a container. I decided to pour some of it on the sandwich and have some on the side. It was a delicious win win! I am so glad that they make real gravy here. The crew Jaxon and Clinton are totally awesome and super friendly. They are there to expand your palates' horizons and to simply put a smiles on your faces.

Incredibly tasty and can last as 4 meals between 2 people, the portion is HUGE! Not too salty at all but so addictive. Lastly, their aguachile is a must! I wasn't even planning on getting mariscos that day but it felt like a sign so I took it as a little treat. It's a food truck setup with folding tables and chairs and a pretty big parking lot since the plaza itself is kind of dead. Parking was easy and there was plenty of space. I walked up and they were doing construction on the tent right above where you order and it was really loud. I feel like that could've been done during closing because it disrupted the vibe. The area is already a little rough so it just made things feel a bit off. The lady working was super sweet. She took my order, you pay right after and they do accept tap to pay which I love because I don't carry cash. They take your name and call you when it's ready. I got mine to go, waited about 10 minutes, and everything came out pretty quick. They packaged everything really well too which I appreciated because aguachile can easily spill. For the tostada they gave two packs of saltines and three tostadas which felt like a good portion. They also had fresh salsas at the truck but I skipped them since my taco already came with sauce. I ordered a fish taco and an aguachile verde tostada. I went home excited to try everything but honestly it didn't really hit for me. The fish taco was a good size with a lot of cabbage and a white sauce, but the fish was a little too soft. I wish it had more crisp and overall the flavors just weren't memorable. It's about $3.70 so fair, just nothing standout. The aguachile verde was the weakest part. Some shrimp textures were off and a few had a strange aftertaste. I've had a lot of aguachile recently and this was probably the lowest quality. I will say they were generous with the avocado and the sauce itself had a nice spicy kick, it just didn't come together overall. There was also an earthy note from the seeds that was very prominent which I have never experienced in aguach For the price, I paid around $20 with tip for both which isn't bad for the portions. It satisfied the craving in the moment but not somewhere I'd go out of my way to come back to.

We also ordered the Koko Tacos, which are New Mexican style (beef and potato) and it just soooo good! The salsa reminded me of Sadie's (you know what I'm talking about!) And to top off everything was the red and green chile cheese fries. My husband ordered the red, I ordered the green. They were both delicious! You definitely need to try this place out!!! Living in San Diego and being from New Mexico we miss the authentic New Mexican food. Kokopelli's knocks it out of the park with the red chile tater tots and the green chile burger! If you're from New Mexico or want to try something different than a "Carne Asada California burrito". Find them and order the Kokopelli burger and green chile fries! This isn't your run of the mill Jack of the box burger! 11/10 would recommend!
