    HH review In short…read moreGreat design in a very welcoming space. Food might be under-seasoned to some people, but it's very well executed...and you can always add salsa. Great bar program, too. In long Previously, my biggest complaint with coming here was the total lack of parking every time I have tried. They obviously have no trouble getting the crowds in here. Today we scored some free time in the mid-afternoon, and their HH starts at 3:00 every day. We did go off the HH menu for 3 items, which ended up being worth it. You can't help but notice the buildout here. Pretty lights, interesting patterns or murals on almost every wall, lots of cool detail to the finishes everywhere you look. They even have yon selfie wall next to the washrooms (they took down a much bigger one). The bar has a couple flatscreens showing the game, but I'd probably not come here specifically to pay attention to a ballgame. At regular price, we got an awesome plate of chunky guac which I'd put against guac anywhere around here, at least that I've tried. At $15, it was almost a buck a bite, but, man, it was tasty. The bean dip had a great creamy consistency and mixed well with all the other condiments. We also got a muddled fruit cocktail from the regular menu, which was also excellent. The ceviche isn't a huge portion, and not overloaded with shrimp, but, hey, it's HH, and it's super fresh and tasty. The street tacos had awesome grilled flavor on the chicken, and the salsa served with them was fresh and excellent. We got 2 other salsas with our chips; the table salsa is nice but mild on the heat. The habanero salsa was a little too runny to get much on a plain chip, but it had great flavor and kick. Everything tasted really fresh and added plenty of seasoning to whatever was on the table. This is definitely a good place to mash up your salsas and dips and see what you concoct. The street corn was delicious. Such a perfect HH food--easy for the kitchen, but tons of flavor, and they nail the presentation. Corn tasted really sweet and crunchy even though you know they get it frozen. I'd get it again any time. For 3 apps, 2 dips, and 2 cocktails, we were under $90 before tip. Not too bad, especially since we went off the HH menu for stuff. This place is definitely in the rotation.

In long Lately we've been seeking out places that are literally quieter--less volume on the music, more space between the tables, and so on. I'd been wanting to check out 5x5, anyway, since it's the only spot around with an exactly perfect rating score. It looked like it'd fit the bill for a low-key place, and off we went. We came in shortly after they opened on a Saturday (4:00 PM). You're in a larger business-traveler hotel here, aimed at Boeing and Boeing-sub folks traveling for work. The building looks kinda generic from outside, but there's plenty of parking, and the lobby has a high-ceilinged atrium vibe for sure. Nice floor tiles, nice carpet, tasteful furniture. Everything's in perfect shape. You don't feel the lounge vibe right away, but there's a gigantic fireplace ahead of you, warming both sides of the room from the middle. Around that, there are lots of sturdy, shiny tables under the lofty ceilings. Off to the side, there's a little lounge area, then another one. Everything in the lounge is bar-height seating, and there are a few flatscreens, probably showing the game. Most folks are in here, sitting around the bar in the middle of the room. We posted up at a table just outside the lounge. Lindsey was behind the bar, and cheerfully answered every single question we had about food and all their cocktails. She's super friendly and makes a great drink for sure. She seems to have a bunch of regulars who aren't staying at the hotel, which is a great sign, no doubt. We checked out the warm pretzel--such a decadent treat. The waffle fries (and especially the aioli that came with them) were awesome. The pizza was a great choice; we added pickled onions to the Speedway. The crust could be a little crisper but we took home what we didn't finish and it's great here, too. Service on food and drinks was really quick. The cocktails here can be really creative, and there are lots of classics with house twists on the recipe. They even have a pisco sour they've tweaked--that's a fair bit of work for a bartender to make mid-shift. We got 5 great drinks and 3 nice plates of food for $96, and I don't think we even ordered anything from the HH menu. This is a very easy place to add to the rotation.

The revitalizing Everett downtown offers an increasingly impressive selection of restaurant and drinking choices. The Colby Club is one of the best. Presented as a "Speakeasy ", it is not in any way hidden away, but strives for the '20s vibe, with period furniture and decor. The staff are friendly, knowledgeable, professional,and helpful. Our Bartender, Mark, was exceptional! Watching him craft our cocktails was a show in itself! Delicious cocktails well crafted and presented. We're looking forward to our next visit!

I thought it was closed. It's dark outside, no sign glowing, kinda mysterious in a "do we knock or...?" way. But we slide in and BAM... disco lights, disco jams, and staff dressed straight out of the '70s. I was instantly vibing. We snagged a table facing the crowd because obviously I live for good people watching. Our waitress, adorable and super sweet, suggested I try the Lavender Flip, and holy moly it was amazing. Like floral, creamy, cozy perfection in a glass. Hubby got some cucumber-whiskey thing that looked so fancy I had to steal a sip (and yes, it was as good as it looked). Food-wise, we split... he got the charcuterie board (solid) and I got the bacon-wrapped dates, which were basically tiny bites of happiness. Just enough to snack on without ruining the drinks. The whole vibe? Chef's kiss. My husband actually said, "This is my perfect place," and he's not wrong. Chill lighting, funky crowd, killer playlist, and that sweet spot between classy and relaxed. Only hiccup, it took forever to get our check, but to be fair, it was packed and our waitress apologized about a dozen times. Then I find out Everett does some big "First Friday" thing every month, and Colby Club goes all in. Disco night and all-night happy hour. Like, what?! Unreal. Definitely coming back on a regular night too, just to see what the "normal" vibe is like (if it's ever normal). 10/10 for date night energy, people watching, and cocktails that make you wanna dance under a disco ball.
