I was eager to try their interpretation of Dubai chocolate so got a bar of that, some almond orange bark, dipped chocolate orange rinds and a hazelnut cappuccino truffle. And indulge I did recently after a stop at the Chocolate Necessities factory store on the Guide. From the moment I walked into their small chocolate showroom I could smell the sweet deliciousness of wafting out from the adjacent manufacturing facility (and by manufacturing facility I mean the little room in the back where the magic happens). Surrounded by displays of truffles and other deliciousness I beelined my way to the front counter to pick up a special order I'd made for an event later that day. I was handed the most beautiful box of custom truffles, including salted dark chocolate, mint, caramel, and other bite-sized morsels of decadent amazingness. And my event guests later agreed: these succulent treats were all delicious, and the perfect accompaniment to our evening. So this little hidden gem is well-known amongst the local population. To a tourist driving by on the guide you might notice the sign "chocolate factory " but it's pretty small and easy to miss. If you consider yourself to be a chocolate connoisseur, you simply must pop by when in town. Everything here is super fresh (after all, this is the factory). Whenever we travel to see family and friends out of the area, we stop by to pick up a custom box of truffles the day before we leave. You can choose the size of box /how many pieces and you can choose which pieces to fill it with, milks, darks..every one more heavenly than the last. Then, chose From a dozen tasteful wrapping papers and choose ribbon And you are all Set. Perfect hostess gift as well. Who Doesn't like chocolate? And this is Not your ordinary chocolate by a long shot. The store is small but packed full of all Kinda of goodies, chocolate bars, chocolate coffee, special chocolate shapes etc. I believe you can even order custom Cheesecakes here. It's in a row of industrial buildings with just a small storefront. Oh my gosh! So many choices...bought just a small sample to try but will be going back...for sure! And buy more than a 'sample'. I have yet to find a better seller of fine chocolates. I love the staff there. I have come to that shop as a chocolate lover, a gift buyer, a baker, and a teacher with a group full of school-age kids. Every time I have been in that shop, I've been greeted and helped immediately. It is a shame I don't live in Bellingham anymore to be able to visit this shop. The staff often puts out samples of their amazing chocolates and are quick with suggestions if you are looking to make a specific type of cookie. The quality of their chocolates cannot be beat. Much of it is imported from Europe and they use Callebaut chocolate in the making of their truffles. You can also buy huge chunks in bulk. The staff also have excellent recipes featuring their chocolate. If you go buy the powdered cocoa, ask about their hot chocolate recipe. It is extraordinary! I like it because it doesn't leave a grainy powdery mess at the bottom of your cocoa cup and the flavor is wonderfully rich and not too sweet. There is also a recipe for peanut butter chocolate chips that is tried and true delicious. The other great thing about Chocolate Necessities is their truffles. I recommend (in the highest) their balsamic vanilla caramels. When I moved away from Bellingham, they were making these and I was getting hooked. To this day I have not tasted any chocolates better than this. Also toward the end of my four years of living in the 'Ham, they started using tea (from the Spice Hut- which is another review entirely) in their truffles. It is in an odd sort of location and you can't see their shop from the road (its a road off the Guide) but if you are a chocolate connoisseur, you should go out of your way to visit this delightful place where chocolate is king! This is as good as it gets; you won't find better tasting/quality chocolate anywhere else. I lived in Europe for a few years, and I'd rate this place above the chocolatiers I frequented over there. When I moved to Olympia in 2014, a friend in Mt Vernon recommended Chocolate Necessities. I began ordering callets as a "breakfast dessert", and as a dietary "necessity". I moved to a another senior residence in 2016, and Chocolate Necessities was undergoing a huge make-over. I lost contact. I haven't found a comparable new source, and today I returned to my favorite chocolatier and placed an order for my four favorite selections. Cooler weather makes shipping easier, even though it's usually only one-day delivery.....south to Olympia. Not only did they look beautiful when they were served to us, but they were the best chocolate-flavored drinks we ever had! And to top it off: the employees and owner are very kind.
