Antler Baking Company was recommended to me by a customer in Bellingham, I was excited to come across its booth last week. The molasses cookie is absolutely PERFECT!! My kiddos love the chocolate chip and cinnamon rolls. The cookies and rice crispy treats are large enough for at least 4 people; 2 depending on one's sweet tooth. I plan to purchase more prepackaged treats for our holiday gifts for neighbors. The is booth located on the right side of the small vendor market shopping area at Enchant Christmas. Update: 4/5/2022 I have to write another 5-star review of Antler Baking Company! OK, I'm already a fan. But this latest experience was awesome! Veronica has said on many occasions, 'These freeze well.' And she's 100% right. But I didn't realize HOW well. They seem to age like fine wine. I found a Double Chocolate Coffee Cookie Sandwich in our freezer. It was probably purchased in early December. We haven't been up to Bellingham since then. We immediately wrap Antler's cookies in Sarah wrap and then freeze them. But I normally don't take 3.5 months to eat one. Anyway, I pulled it out, left it on the kitchen counter and then had it for dessert Sunday night. OMG! It was amazing. My wife even stole a couple bites from me. It was so moist and fresh. Absolutely delicious desserts. I was at Enchant, Antler had a booth, and I could not bypass the booth without stopping to try a sweet treat. The first item I tried was their cookies stuffed with a delicious frosting. Their cookie dough cookie sandwich is great, it is a little sweet but still delicious. I also ordered a double chocolate candy cane bark cookie, this was to die for. I loved the flavor, the crunch of the candy canes with the perfect amount of flavor. Not too sweet, perfectly balanced, soft and so fresh. After trying these two cookies, I needed to try more. I ordered a pan of cinnamon rolls for Christmas morning, these were easy to bake, and tasted sooooo good. We did run into a little problem where the bottoms did not cook fully, however I think if I placed the aluminum pan on a baking sheet we would have gotten different results. Lastly, I needed to try the brick sized rice crispy treats with brown butter and smoked sea salt. It is difficult to mess up rice crispy treats, however it is equally difficult to make a delicious experience. Hands down, the best rice crispy treats I have ever eaten, the brown butter adds a caramel flavor, the smoked sea salt creates a savory/sweet experience. The brick size of these treats allows for multiple servings(if you please). Overall, so many good treats, if I lived closer I would be frequenting the shop. The atmosphere of the cafe/lounge itself was very clean and aesthetic and I wanted to stay there for hours. I was invited to a Yelp event at Antler just before Christmas and even though I'd been there before, I was not disappointed! I purchased some hazelnut brittle with Krampas (from a local distillery) and my husband proclaimed it . In the cute little box of treats were cookie sandwiches. One chocolate peppermint and one vanilla bourbon. Great textures and flavours. I'd say my fave of the 2 was the vanilla bourbon because it had that little boozy hit and it's Christmas I've also purchased cake slices here before and the flavours are spot on. All Covid precautions were followed by staff. Non contact purchase. This little Bakery shares space inside the Woods coffee shop and specializes in wedding cakes, Custom Cakes and many sweet treats. The slice of cake I recently tried was some raspberry and Tequila flavor I think and was huge, big enough for three or four different servings for myself and was most awesome and I highly recommend Veronica's cakes here. Well, my girlfriends and I always love a good dessert, and when we saw the display earlier in the day the Woods Coffee employee gave us the scoop and said you have to try her desserts. We have our usual favorites in town for certain things, but I do think Bellingham can always use a great little dessert spot that offers up a variety of items beyond just cupcakes/cake. Amidst the decor of warm woods and white cake stands is a variety of impressive desserts. Our selection for the day included peanut butter pie, a chocolate torte with a berry sauce, carrot cake, a gluten free polenta cake, porter chocolate coconut caramel, white cupcakes with raspberry and a tequila frosting I think, and mascarpone chocolate chip cookie sandwiches, among other things. What I love are the unique flavor combinations: cardamom, porter, sea salt, candied orange, mascarpone....these desserts are definitely elevated beyond your typical fare. I opted for the cupcake and chocolate cake. The cupcake was dense and moist, just the way I like cake. The tart raspberry balanced lovely with the sweet frosting. The chocolate cake was phenomenal. A lighter cake in crumb texture but rich in chocolate flavor and superbly moist. The coconut flavor in the frosting resonated but didn't overpower and the toasted coconut on the exterior added a great textural element. The porter was pronounced, with that coffee richness I associate with those beers. The caramel was rich and delicious. Overall everyone in my group raved about their desserts, and we are so happy to have a unique delicious option in downtown and close to work. Check it out! read more

During the Covid 19 pandemic we were able to order and have curbside delivery of sweet treats for my husbands birthday. We chose the individually sliced cheesecake with mixed berry topping. The cake texture was perfect. Not too whipped and not too heavy. The graham cracker crust was buttery and rich with a hint of salt. The berries were a combination of blueberries, strawberries and raspberries in a light syrup which enhanced the richness of the cheesecake without being too sweet. We also tried a spicy Southern carrot cake cupcake topped with vanilla buttercream and a caramel sauce dollop. The cake was moist, spicy and full of flavor. It's easily the best carrot cake I've ever tasted. As recent PNW transplants, we feel fortunate to have discovered this gem of a bakery! It's now our go-to. read more

This newer bakery is a gem. The carrot cake was one of the best EVER. Moist, flavorful and a delight in every bite. Had the special cake with polenta just to try something totally different and it didn't disappoint. The chocolate chip cookie with mocha marscapone filling was so rich and flavorful ya gotta eat it slow but so worth it. Every time we go wanting the cake with tequila we've been hearing about it's sold out. Classic flavors mixed with some surprises make for a wonderful dessert experience.
