Turns out I guess Moscow is known for having issues with water. Our miso soup had no additives. No tofu, or seaweed. Just broth. Our sushi chef also forgot one of my rolls, and forgot to give my aunt her yakisoba, so we had to ask for them. There was only one other table of 2 seated while we were dining, so I can't even blame a busy dining room as the reason why the staff was flustered. On the plus side, our server did bring my baby cousin a tiny serving of miso soup, so my aunt didn't "have" to share hers, and brought a spoon for the baby, so that was a nice touch.
