    Back in Feb 2020 (feels like forever ago) we did a company team-building event with In The Kitchen. Forty of us prepared dinner together! We started with a beverage, then were guided by chefs throughout the meal preparation process including a decadent chocolate brownie dessert. Everything was delicious! And even at my age, lots of decades, I learned new techniques. In fact, I've since upgraded my kitchen knives. During dinner we got to know each other and we're pretty darned proud of the results of our collaboration! Since then, the Fennel Salad with ruby red grapefruit is my pandemic go-to. I make it every week and it serves many meals. ENJOY!

He took the time to explain the pasta making process in detail and gave us useful tips as well as teaching us a bit of history and geography. This is the complete package you guys! You will definitely learn and you will have a delicious professionally prepared meal at the end. We stated with a basic pasta dough that we kneaded by hand. While the dough rested we enjoyed a delicious fresh salad of greens, carrots, cucumber, and tomatoes just drizzled with aromatic olive oil. Brought back memories of vacations in Italy where we made salad from the veggies growing from our garden. We continued in our pasta making journey by rolling out the dough and passing it through the pasta roller. Chef also demonstrated how to make different shapes of pasta and the history behind them. We the watched him prepare our pasta dinner! This was the most challenging part...mouths were surely watering! We were served pappardelle with mushroom ragout, and ravioles stuffed with truffled ricotta. Everything was fresh tasting and delicious. I loved all the simple ingredients and the light natural flavors. Dessert was chocolate mousse with strawberries and fresh whipped cream! Heaven!! We all left with our very own pasta dough ...and I'm seriously considering practicing what I learned! This was such an amazing experience and I'm looking forward to trying something like this again.

The length of the class was about 2.5 hours of incredible Pasta making and Pasta filling and shaping. Chef for the class was Chef Nunzio from Naples, Italy. Chef Nunzio was simply amazing. He has great charisma and is extremely talented. He took the time to explain the process, to make contact with each one of us at the class and to guide you as needed. Who knew that making pasta would be so much fun. We made Papardelle from scratch with a mushroom ragu and also ravioli stuffed with truffle oil flavoured ricotta-parmesan mix. (This was heaven in a spoon) Also created a small salad appetizer to let the pasta dough rest after the knitting process, with a simple yet delicious citrus vinaigrette. Ohhhh.... it is a BYOB kind of a deal that I didn't know about... So feel free to bring a nice bottle of wine to drink and share as others kindly did since I didn't bring any. I highly recommend Cozymeal to anyone wanting to learn. The "how to" process is incredible. Can't wait to see what other classes are available to sign in. She brought ponchos so we could continue on as it rained. It was beautiful to learn about and see this neighborhood through the eyes of someone who grew up here. Toni knows so much history and seemed to know so many of the people, too! The tour has so much food - I was honestly more than full at the end and I didn't even finish all of my portions. I think it was a really good range of drinks, desserts, and food. Even though that coffee cup looks small, that's a full serving size and it was strong! I really really appreciate that this tour not only accommodated for vegetarians but also chose options for me that were realllllly good. Instead of the cubano, I had these fried plantain cups stuffed with veggies. They were SO good and seasoned well! And the spinach and cheese empanada was also amazing. My friend who got the meat options also loved her food. This tour is the perfect way to learn more about Cuban history, the history of the neighborhood, see all the street art, watch a game at domino park, and experience some of the best food in Miami. The time went by so quickly and it wouldn't have been the same experience without Mariela as our guide. She is so passionate and knowledgeable. Her energy was so upbeat. I think this a great tour for visitors who want to learn about a culture that shapes Miami as well as locals who want to learn about a neighborhood they may not know the ins and outs of. Mariels brought Cuba to us and we can't thank her enough! We highly recommend this tour!
