He boldly went up to the vendor and asked for a sample which I embarrassingly looked away but he was given a piece (hey, closed mouths don't get fed) and he was immediately set on getting something from here. He got the ribs plate, I was $35 and came with salad, rice, and fries. It took a while for it to be ready, like 30 minutes, but I do understand as when it came out, it was literally a GIANT rib piece. He cut the meats off the rib and started nawing on it like a cave man. It was a very enjoyable experience for him, although, it was clear that the meat was a bit chewy and tough. The chewiness and toughness was a big let down for sure, as for all the meat that he cut off from the bone, they were all very hard to eat. HOWEVER, it was very flavorful, so I guess it is the trade-off from the way they smoke/cook it. We also added a chorizo, it was flavorful and juicy, obviously much easier to eat. The fries were good, some pieces soaked up the meat flavor which was yum. The salad was underneath the meat and got sooo greasy I couldn't eat it, the tomatoes were good though. Overall, I feel like the ribs plate was super worth it. However, you just have to be ready to put your teeth and jaw through a bit of a battle.

While the flavour was there, the day we got them, it was quite tough to cut and rather chewy which was disappointing. A lot went to waste. Don't forget to add your choice of side sauces on the table in front of the truck! All 3 are excellent. Service is quick. The wait in the courtyard is pleasant, specially if there is a breeze and the sun is a little lower, quite comfortable.

Bringing a friend to this market, I wasn't sure whether he'd been here and I walked off to use the restroom which is now the one on campus. As I returned, my friend had wandered to this stand and generously shared what he bought with our other travel companion and me. They don't have a permanent location, and do pop ups at various locations. I love a great empanada, and have been getting mine from the "other" empanada store that opened in early 2024 in Kailua. These empanadas are really small for the $5 price 3 for $13), but that's the only "negative" about it. It's about 3 inches across, which is about half the size of a "regular" sized empanada. Empanadas are more of a snack anyway, but two or three would make a meal for me, just not at this size (lol). The taste and texture are really great. The crust is flaky and slightly crisp, like the outside of a biscuit or a pie crust, which is really nice. The fillings are very tasty, and they have a good variety. I tried the Greek empanada, and the Cochinila, which is a slow roasted pulled pork. They were both very good and flavorful. They provided a small dish of chimichurri, fresh, tart, and slightly spicy. Their special one is their crab empanada ($6), and if they're a regular at the Kailua FM, I may try that the next time. Overall, they're very tasty with a great texture, but a bit pricey.
