I always thought this place was just a butcher shop, but they cater as well. We hired them to cook the meat for our family reunion of about 50 people this past weekend and everyone at the party was so impressed with their cooking. The tri tip we ordered was cooked to perfection. We also had them make chicken quarters, which they cut into thighs and drum sticks for us. Chases Chop Shop has the best meat and side dishes. It's so much better than any meat you will ever get in a grocery store. It is so fresh and of such great quality. Yes it cost a little more than the grocery store but the quality of meat that you receive is worth so much more than what you pay. Just placed an order for 10 pounds of hamburger meat, the apple sausage, Honey cured bacon, the ultimate meatloaf, blue cheeseburgers and the scallop potatoes. I love how everything is individually wrapped/sealed especially the hamburger meat. When you order the hamburger meat it is vacuum sealed in 1 pound packages. The ultimate meatloaf........ how can you not love an old-fashioned meatloaf wrapped in bacon? Even though it's from a store, you can totally tell it's made with love. Drove to Madera to pick up a brisket. first of all I ordered brisket and they gave me try tip didn't know until I got home. Let me tell you that tri-tip was delicious so although they didn't get the order in right we were very pleased with the tri-tip. The man at the register which happens to be the owner not too friendly but was not rude either. This is THE BEST PLACE to get your quality meats !! Every Saturday they have fresh BBQ if you don't feel like doing the work they have it all prepared! It's a bad idea to go on an empty stomach because you end up wanting everything! They have sausages that are TO DIE FOR! I don't know why I always thought this was a car place based on the name. They actually sell really good meat there. It's like a small market where you can get fresh or packaged meats. Parking sucks and you have to drive around twice sometimes, but it's definitely worth a stop. Some stuff is pricey, but you can also get good deals if you look for their specials. Great place if you want good quality meat for a nice dinner or family bbq. read more

If I could give zero I would. We got jerky from there that they grabbed out of the back and we got home and noticed mold! We contacted them and they said they would make it right ( it's been over a week now, nothing has been done) and tonight was my last straw we were going to make chicken from there and it smelled SO bad when we opened the package we had to toss it. This is the best meat in the valley. We got rib-eye steaks for my mom's birthday last year and they were so tender, juicy, and tasty. We froze half and had them recently. Still perfect. We have also had the Bloody Mary chicken and pork chops. Yummm! And we buy their sausages all the time. My favorite is the apricot jalapeno and pumpkin breakfast (that one is seasonal). The bangers are very traditional and really compliment a Full Fry Up. Seriously, the only place in the valley to get great meats. read more

I called for meat advice and received great information from Melissa. I mentioned to her that I needed a meat for Beef Teriyaki and she recommended Flat Iron Steak where I was originally asking for sirloin steak. When I arrived and ordered the meat which only 3 lbs was available, but they were able to accommodate by cutting up an additional 5 lbs. Great customer service of accommodating my order and I walked out a very happy customer. I didn't want to drive to Fresno and visit Sam's club, fortunately they were open til 4 pm. My only complaint is that the potato salad is a bit small and needs salt. Other than that I have had literally every tritip sandwich on the menu and they never disappoint. My favorite is going to be the Bloody Mary sandwich. You can't go wrong with blue cheese. Oh and the meat counter has some really good stuff too. read more

I would not recommend Chase's chop shop had a pig processed by them have never been so disappointed in my life I have never seen a chop shop process an animal the way this one was cut upThey obviously have never been to meet cutting school . Never in my life have I ever seen pork chops the size of a dinner plate and heads up their hours are whack too they don't open until noon they close at 5:30 they're closed on Sundays and Mondays which is normal but don't leave your meat there over 72 hours or they'll charge you a $50 locker fee and they don't take checks either and their Saturday hours are 10 to 4They don't realize that their hours don't meet most peoples schedules but no one said there was any common sense in this chop shop read more

We had two pigs sent there for processing. We explicitly said we didn't want any hams. We also said we wanted most spicy sausage, ribs, and the links that were suggested. Well for some reason none of what we talked about ever resonated with these folks. We received four large hams from two pigs(We are not sure how that happened), ham hocks, no ribs at all, none of the sausage was even close to being spicy and not even a pork butt. Needless to say we wont be making the trek down to these folks again . Listening to the customer isn't a quality these folks posses. read more

This hole in the wall is definitely a great find in Madera. I won't give them 5 stars because their tri tip sandwich is not the kind I like. It was good, but I feel it could be better. We also tried their French dip, which was again, good, but not th best I've ever had. What impressed me most was the selection of meat and other goodies you can buy in a fresh butcher shop. I feel this would be an awesome place to go to buy supplies for a bbq, but for lunch, I'd say Fresno is a better bet for the best tri tip sandwich. Chose 4 different kinds of sausages and then came to pick up and found out there wasn't enough meat for what I had chose and they never called to let me know or chose what I would rather have. They just decided for me and didn't say anything till I opened the box. I would have appreciated a call to give me a heads up so I could say what I wanted the most. Great meat shop but their sandwiches - I could of made the same thing at home. Their prices are high from their meat and even their sandwiches seemed pricy. I ordered the turkey sandwich which came on 2 slices of white bread (like the kind I have at home ), small portions of turkey, lettuce, and tomato. Their menu of sandwiches to choose from was 6. Although their selection was very good, that is the most expensive meat I have ever seen. I don't know if it has to do with the fact that they are the only legit Butcher shop in town or the fact that they are not getting a lot of business but wow. Ten pounds of ground beef and some chicken breasts cost me around $80. I was appauled, no more going there; I would rather drive to Food Maxx or to Fresno to my old butcher for that much money. read more
