I understand that a restaurant cannot guarantee a completely gluten-free environment, but using a visibly dirty slicer and counter for a gluten-free order is an avoidable sanitation and cross-contact issue. Jersey Mike's has a reputation for taking gluten-free orders seriously, which is one of the reasons customers with dietary restrictions choose to eat there.
