It was only about an hour or so away from our house, so this was a real treat. Even though it was a cloudy day in March, the distillery was so beautiful. We can only imagine how gorgeous it is in the summer. We ended up having a private tour since no one else had signed up for the 11am time slot - fine by us! Our tour guide, Bob, was very friendly and knowledgeable, explaining everything in great detail. After the tour, we had our tasting. The tour and tasting we chose was The Hillrock Distillery Tour & Barrel Proof Tasting with Cheese & Charcuterie Plate - worth every penny! The bourbons were all absolutely amazing and the charcuterie plates paired perfectly with them. We ended up buying our two favorite bourbons, along with a pair of glasses and a hat for my husband. We are already trying to find another occasion to visit. Who knows...maybe we'll try The Founder's Tour next time. Thank you for making my husband's birthday so special. Business was slow so the woman serving drinks offered us a free tasting of their four main liquors: vodka, gin, maple spirit, and rye whiskey. She was incredibly knowledgeable and was able to give us detailed descriptions of each one. I'm no liquor expert but the gin and maple spirit were both delicious. We bought a bottle of each and can't wait to tuck into them later. We stayed for a few cocktails as well and really enjoyed their pleasant tasting room. If liquor isn't your thing, they also offer a few local wines and beers. Highly recommend checking this place out when you're in the area!

The cider that Steve and I was so impressed by was their Dry Cider, the classic version. I do love dry ciders and they are my preferred cider type over the really sweet fruity ones and this cider fit the bill and hit al the right spots to grant them five stars. It's very unfortunate that this cidery closed but cideries aren't immune to the shrinkage that craft breweries are going through which is resulting in a large amount of closures for various reasons. But it's especially unfortunate when a good product an brand goes under from this ongoing phenomenon.

Everything they do with maple is glorious, and the rye they make using Japanese barrels - while their most expensive - is very, very good. They also have a maple cream ($30) that is delicious.
