Casa Encantada in Baguio is a true haven for plant-based cuisine. For lunch, I was treated to a specially curated vegan degustation by the brilliant Chef Prince and Chef Francis--an experience that beautifully redefines vegan comfort food.
The meal began with a Karamiso maki roll, featuring teriyaki-seasoned shiitake mushrooms wrapped in perfectly seasoned rice--an umami-packed bite that set the tone for the entire meal.
The main course was a soul-warming Vegan Tantan Ramen, topped with bok choy and a deliciously seasoned vegan ground meat that brought depth and texture to every slurp.
On the side, firm tofu Karaage balls glazed with a rich vegan tonkatsu sauce, paired with Mikarashi Dongo for a hint of sweet-savory complexity.
Dessert was an artful duo: tropical mango panna cotta on one side, and a matcha oat panna cotta on the other--each smooth and delicately flavored. A playful coconut quenelle, topped with coconut charcoal and candied kasoy, which was as creative as it was satisfying.
