If I could rate 3.5, I would. Canyon Smokehouse was pretty much the only game in town Thanksgiving weekend. The joint was packed to the gills. Like most BBQ joints, you order at the counter and pick up your food later. Ratings of the meats are below. All the meats were not warm enough. The ribs were cold. Ribs - 2 out of 5 Sausage - 3 out of 5 Brisket - 4 out of 5 Everything was served Texas Style. The available sauces were just OK. The green Chile Mac and cheese was a good side. The people were friendly. There is no theme or Ambiance. It's just there. If you go, get the brisket and avoid the ribs. read more

Went there for an early dinner. Greeted by the lady working in the front; very friendly and efficient in explaining the rundown of how to order and get the food. Had nacho and pull pork. They were good, but the prices are not "slim" - well, not unexpected or unlike other restaurants in town. Nonetheless for $18 nacho, we would expect more chips at least on the tray. There aren't a lot of choices in Bluff. We pulled in an hour before close and they were out of brisket and pulled pork. The barbecue chicken was ok, but the non barbecue dishes were bad. Queso was the fluorescent orange goop you get at a gas station, tacos were just sad, and the BLT would have been ok for $10, but it cost nearly double that. It's counter service and you pick up your own orders, fill your own drinks, and bus your own tables. read more

Wow! We were here their second day of being open. Knowing the first week or two can be shaky, we were prepared for surprises. But not the surprise of the food being SO good. So good! My companion had the carnitas nachos, we could have easily just split it. I had short ribs, OMG, the portion was enormous. Tender meat, cooked to perfection. The Mac and Cheese was very tasty. Just the right amount of chiles and not overly saucy. Some might want a more gooey side but was so delicious that I didn't miss the gooey. The Brisket was some of the most tender and tasty I ever eaten and I LOVE Brisket so I've eaten a bit. Two of us shared a half pound and 2 sides and that was enough but it was so good we left wanting more! The staff is very friendly and attentive and the picnic style interior is funky and fun. Really good food that you'd buy even in a city, and while it's offered at city prices it's not offered at even *worse* than city prices like some of the stuff around it. A far more appealing, friendly, and human place than anything else I found in this beautiful but slightly weird corner of Utah, and friendly folks, too, with none of the slightly hostile attitude toward out-of-towners that I encountered elsewhere in the town (like the incredibly expensive trading post).
