The sauce class was amazing - over the course of two days, we learned 24 different sauces, and covered every type of sauce (dessert ones too!). We made a dish with each sauce, so we got some experience of what to pair them with. They gave us recipe packets and we went over the recipes and ingredient selection (take notes, there's a lot of information that gets shared that's not on the recipe), and then each person got to focus on one or two dishes, with interruptions to check out the important aspects of what other people were working on. The knife skills class was more basic - while fun, we already knew a lot of the information in it. There were still a few tricks to learn, of course, but it seems that past learning the basics, knife skills is mostly about getting lots of practice. The dim sum class was similar to the sauce class in the format - a bunch of recipes and each person got to pick which one they want to work on. For me, the main reason to take that class was to get some familiarity with ingredients that I haven't been exposed to (OK, I've eaten them, but I haven't cooked with them!). The techniques were introduced clearly and each of us got to practice putting together the different kinds of dumplings and potstickers and such. Since then, I've made the Cha Siu Bao, and it looks like what we learned in class stuck. I like using the cooking classes to increase my comfort level with ingredients that I haven't grown up using. Yes, I could print out a recipe and figure out a lot of it, but how and what to buy is a bit harder when I'm working with unfamiliar cuisine. The little tricks that I inevitably end up picking up from the classes are incredibly handy and increase my comfort level with cooking even more.

    ADA department is not disabled person friendly. If you…read moresuffer from disability (Physical and/or mental), requiring accommodations, and a single parent fighting forward, the ADA process at this school is atrocious. The lack of professionalism / respect from the ADA lady, and the treatment by her hire ups was unbelievable. After I went through hell and back, I finally got accommodated and settled. I was doing their online course. The teachers I had were wonderful and I actually really enjoyed the course itself. The accommodations I finally obtained made all the difference. Unfortunately during one of my assignments, I did not realize I could hurt myself in the process, but I did, and it took me over a month to be able to get back into things. Even though I kept trying to participate, the school kicked me out of that session. I got better and tried again. This time our home flooded and we ended up homeless. Because of my health and the stress being way too high for my body to handle, I could not continue. Now that things are finally settled, I was trying to get back into the swing of things again. This time I was better prepared (proper needed equipment to prevent re-injury) and settled in our new home. They refused to allow me back into the school unless I pay $3000 towards my balance. I survive on less than $1000 a month ($300 just to my car payment). I'm a single mother, in a wheelchair, with degenerative conditions and they know it. I made a special request for reconsideration and to be a part of my success story, and they rejected me with this $3000 offer. This is being done on purpose to push me out, because they don't want to deal with me anymore. They truly made me feel like a nuisance for trying to help myself. I have found a new school that already seems to be more up to the challenge of helping someone like me to accomplish their goal. Part of my situation is, I have a Neuro degenerative condition that is going to kill me, I don't have any time to waste. Now all the time and assignments I did put in at this school count for nothing. I told them everything about myself. They know exactly what they are doing to me. I almost forgot to mention. There's a man in the technical support department that is purposely targeting female students, lying and manipulating them to going to certain pages on their computer that are completely unnecessary for the assistance he needs to give. The page he will take you to shows him information that he wants or needs for whatever reason he has. This is my first experience dealing with this goal besides dealing with ADA. I reported it, nothing was said more to me about it. In the end I ended up helping myself and solving the problem myself. PLEASE BEWARE LADIES!! EXTRA INFO: For these types of schools you will need to schedule a doctors appointment to obtain a letter for your ADA accommodations. Doctors records don't count. You will see there's a lot of advertising of $7495 money given to you from the government for going back to school. Yes, there is that money, but they only give you $100-$200 extra a month until you reached the limit. They do not give that to you upfront to help you with the purchasing of necessary equipment and supplies you need to be able to graduate their online course. I did not have everything I needed my first attempt at this course which is why I injured myself accidentally. They do give you some basic stuff for the course, but they do not assist with anything further if you are physically and financially challenged. They go by assuming you already have most all of what you need at home. They do not consider if you're getting out of homelessness or other hardships that has you without most of what you will need. If you would love to attend culinary school for a diploma or degree. I've decided to start a nonprofit to help those truly in need. I have partnered with a local and very large kitchen supply retailer. Very soon I will be there donation partner. Aside from top notch customer service, nearby covered parking, and central location they offer a variety of cooking classes to satisfy any age palate. I've been eyeing the date night classes for quite some time and can't wait to tell my friends about their kiddie cooking camps and classes. I was surprised to find everything from French pastry, to restaurant ramen, pasta ravioli, tamales, from scratch dim sum to Korean bbq. You could literally learn to cook anything. If you are looking to spruce up your kitchen be it accessories or a new Kitchenaid mixer I highly recommend popping in for a visit.

I knew I'd be spending plenty of money there, so I graciously accepted and enjoyed the demonstration of the absolutely magnificent espresso machine. We spent about an hour inside, picking through every single shelf, flipping through pages of their cookbooks, enjoying the table settings and Christmas decor, sifting through the clearance section and checking out the teaching kitchen in the back. The staff was patient and helpful with recommendations, and it really did get me in the holiday spirit. I walked out with multiple bags, an empty wallet and a full heart. I'm already excited to go back and try out the teaching kitchen for a class in the future!
