    Cake decorating aftermath.

    As a birthday treat, my girl took me here to learn how to decorate my own birthday cake. A sweet gesture. Be forewarned that Cakewalk Chicago isn't in the greatest neighborhood. I mean, I like abandoned factories and adjacent train tracks as much as the next guy, but it's very outskirts-y. Also, Cakewalk is basically in a shack. It's a run-down old house. Up front is a room filled with cookie cutters, cake decorating accessories and other baking supplies. On the day I arrived a trio of small tables were set up for our class. God forbid you have to use the bathroom in the back. This place barely has running water, which makes you kind of worry about the fact that they're handling actual food here. Despite those major setbacks, the class itself was fun. Chef Lori will give you a quick & dirty tutorial on how to decorate a cake like a pro. Whether your cake comes out looking like a pro did it... that's up to your skill. It was a fun couple of hours, and it was nice to take home an edible souvenir. Oh, and it was fun to have the added floor show of Lori browbeating her husband every now and then. He'd come up to start asking her a question and she'd answer before he'd finish speaking. And then he'd have to ask his actual question again and she acted annoyed. Good times! If you want to learn something fun in a building that should be condemned, Cakewalk Chicago is for you!

    We are in a mission to make a Tangled Tower Cake...we found Cakewalk on Yelp and headed out. It felt like a road trip from downtown Chicago!!! We pulled up and it was closed. As I read the sign I learned they were on vacation. I turned to my wife and said, "Lucy...you've got some explainin' to do!" no I didn't say that but I sure thought it. Just then the owner Lori came and opened the door. She said that they were closed but invited me in to look around. That is called Customer Service and deserves 5 Stars!!! Wow a business owner who cares!!! Lori and I talked about my research on making a cake tower and we came up with some good ideas. She was so helpful. I bought edible paint, brushes and other things to start my project. (This is my wives fault because she thinks I can build it...and I've gotta accept the challenge.) My wife also got cool things to make little mini flowers for her cupcakes...I'm also gonna need flowers for my tower too. So now we start building!!! The store was fun and there were so many things to see. Thanks Lori for opening your doors and letting us shop!!! Lori also gave us directions to see the old historic houses and the castle at 103rd street. She is also a great tour guide too. She takes pride in her business and the area she is from!!! I think she needs to start a cupcake walking tour!!! Thanks again Lori!!!

However, it turns out that you don't need to win the lotto to hire a personal chef. You just need to know Andrew from Crying Onion. I'm absolutely hopeless in the kitchen...so hopeless that I've even managed to mess up a frozen pizza just by sticking it in the oven. My husband and I used to eat out and order in most nights, but that became more difficult after having our daughter. For awhile we tried Meez Meals*, which is basically healthy cooking for dummies. I was a huge fan for 6 months, but between work and motherhood found myself not having time for the very little time it takes to cook the meal and clean it up. And so I searched the millions of reviews on Yelp for some sort of cooking service that would be affordable and healthy.... I came across Crying Onion's reviews during my research. I got hungry just reading the reviews, but noticed Andrew's business was more for dinner parties and catering. I was about to give up and resort to eating cereal for the rest of my life when I checked out Crying Onion's website and noticed they offer vacuum sealed ready-to-heat meals. I very eagerly reached out to Andrew within minutes to get more information: * How the process works: He has a long list of entrees that covers all the food groups, but is open to other ideas as well. * The cost: Depends on the meal, but I've found most of my meals come to $11-12 for 1 meal (order for 2 to keep the costs down). The portions are pretty big so I usually end up eating the leftovers for lunch the next day. Andrew also requires an order of $225 for delivery, which takes up most of the room in my freezer, but not a huge deal since I don't make it to the grocery store too often. * The timing: Andrew needs about a week to prepare everything and then drops it all off ready to stick in the freezer. I've gotten 2 deliveries from Andrew (both enough for about 3 weeks) and I'm a huge fan. It now takes me no more than 3 minutes to "whip up" one of his meals and there's absolutely no clean-up involved. Most importantly the meals are very tasty! I haven't "cried" (pun intended) over a Crying Onion meal yet, but absolute favorites include the butternut squash pasta, kale and soba noodles, and mushroom pizza. I also travel frequently for work so my husband (who's even more pathetic in the kitchen than I am) is happy to have a meal that he can easily defrost and heat up in 3 minutes. First, after hearing that we were students, Ranjana very kindly offered a student discount on an already well-priced class, which was incredibly sweet of her. We chose a North Indian menu, and we were delighted by how many delicious options there were for such a low price: we got to make masala chai, imli and coriander chutneys, samosas, roti, paratha, papad, pepper jalfarezi, eggplant curry, pulav, paneer, tofu curry, and kaju katli (a tasty cashew dessert that I will be trying to make at home!). The experience was intimate, as it was hosted in Ranjana's home, and we really enjoyed getting to learn about the history of her neighborhood, about her family (seriously, a family of changemakers and geniuses), and especially about the significance behind and cultural context of the ingredients we were using and the dishes we were eating. She is patient, funny, and not scared of hot things! Her house is full of art, music, and culture. It is clear she cares deeply about what she does, be it her advocacy as LGBTQ+ ally and former executive director of Asian domestic violence shelter Apna Ghar, or teaching this wonderful class and engaging with her students. And the food... the BEST samosas I have ever had, no joke. I've never had something so flavorful and crisp and just the right bit of greasy from a restaurant. And the roti with the pulav and an array of vegetables with a nice cold glass of water was just fantastic. As my friend said, you might not think, as a meat-eater, that you can have a full and truly nourishing meal without meat. But Ranjana's classes will dispel your beliefs: I left her house stuffed, warm, and smelling like the all the aromatic spices of her kitchen. Before arriving, we had picked out the recipes we wanted to cook. Ranjana then prints out those recipes so we can take notes as we go and can take the recipes home. Since Covid, she is only offering private classes (instead of big group classes) so it was just the two of us for the cooking class. We made SO much food and it all came out amazing. Every dish we made was vegetarian, too! We had mango lassi, daal, saag paneer, samosas, halwa and more. I left feeling so full! Ranjana went above and beyond to teach us cooking tips and teach us about the ingredients we were using. We also learned about all the amazing work she has done throughout Chicago and some history of their neighborhood. Their house is easy to get to and has parking right out front. They can give you a parking permit for your car. If you enjoy the class and want to be able to recreate dishes at home, Ranjana sells a spice kit you can purchase. It is a state of the art facility with everything you can just about think of, and that's just for the students. They also have an incubator kitchen that you can arrange to use for anywhere between 7-12 dollars an hour, just in case you were thinking about starting your own catering company. The staff is very well trained and proffesional. I was comparing the resumes of the Washburne staff as opposed to the kendall college staff and was actually pleased to find out the Washburne staff has either more experience in high quality fine dining establishments, and/or higher education than a majority of the staff at kendall. http://kennedyking.ccc.edu/washburne/staff.asp The education recieved there is more hands on than most culinary schools in the nation, and that is without boosting the tuition to rediculous amounts. In total for the associates in culinary arts is around 14,000. Which is also one of the best in the nation for culinary arts. Also students are taught from the same text as the Culinary Institute of America which is considered the best culinary school in the nation. The provost for washburne was an Associate Vice-President at the CIA. Washburne provides a very quality education without making you go broke.

Offering a competitive culinary education to low income residents of the city of Chicago as well as students seeking a great culinary education, numerous scholarships are awarded every year ranging from small grants for shoes and equipment to full tuition reimbursement. The school has moved to the South Shore Cultural Center, a gorgeous building restored to its close-to-original grandeur. The cuinary school has opened up a restaurant to showcase the students' cooking: The Parrot Cage Restaurant. Although I have not been to the restaurant, I attended their 9th annual showcase, which was as impressive as the cooking was good. The students really did it up, serving up Japanese-influenced favorites from Black Cod with Miso Sauce to a very tender teriyaki chicken.
