So much so, it's time for an updated review. I called ahead but it didn't really matter since seating was swift the night we went. I will say that the biggest downside is the small entry...when people are waiting, they often forget there's other people in the world other than themselves. We were quickly seated and the chips, salsa and bean dip with mushrooms and onions were delivered moments after. The salsa was nice, though needed salt...and the chips were on the older side. Bean dip was warm and tasted great with the mushrooms and onions mixed in. The server was very considerate while my friend and I eyed the large menu discussing all the options our stomachs were interested in. I settled on the burrito de chile verde and my friend had the carne asada taco plate. Food came roughly 15 minutes later, piping hot and with generous portions. I'm well aware this is authentic "Americanized" Mexican food, so I'm reviewing from that perspective. In this context, the food was very well prepared and tasted fresh. The pork in my burrito was tender, heavily sauced and cheesy-melty, wrapped in a fresh tortilla, topped with a lightly flavored chili verde sauce. Beans tasted homemade, though they could use a little more salt or garlic. Rice was a little dry but still edible, especially mixed with the beans, sauce and burrito. Would have loved some more sour cream or guacamole, but overall the meal was very filling and satisfying.

My wife really enjoyed her food, and there was plenty of it, as she brought some home. In my dish, the shrimp were nice and plump, which was great, and the sauce was flavorful, though not as good as at another place I frequent. There were small pieces of mushroom, but there were also a lot of strips of onion, which I'm not a fan of. Just my personal taste. They charge $3.50 for a soda, and for that price, my wife asked for a refill to go. She thought our server was perhaps a bit displeased that she made this request, but we feel that it is reasonable, given the price tag for soda that comes from a machine. All in all, we enjoyed our experience at La Cabanita, and will return, we happen to be in the area (we live in Star).

A higher star rating from me is warranted, however one of the challenges tied to any food truck is the availabilty of seating, shade, etc. There is one table with chairs available however and in our case today we were taking out regardless. The truck and work areas are clean and the menu is clear and concise (unlike some of the hastily handwritten ones for many food trucks). Although "tacos" provides the initial draw, the menu for Tacos Colima is varied. Other than tacos one can choose from burritos, super burritos, tortas, flautas, quesadillas, sopes, tostadas, and even a Torta Cubana sandwich. Protein options include pork carnitas, chorizo, chicharron (+$3), lengua (+$3), cabeza, shrimp, chicken, asada, pork adovada. We both went with burritos today - a carnitas Super Burrito - slightly larger and includes sour cream, avocado, and cheese - and a regular chorizo burrito - the regular is a simple beans, rice, and meat version. Being a chorizo "aficionado" I was more than pleased with my "plain" burrito. The soft tort was filled with an equal amount of chorizo, beans and rice. I was very happy with my choice. The portion was great for $7. The carnitas Super Burrito ($11) was also great, and large enough to opt for leftovers. My dining partner has also tried the carnitas tacos here which she stated were great. Nothing flashy, just really great, basic eats. Each of our plates also included shredded lettuce, thin sliced radishes, and a lime wedge. The burritos were also foil wrapped and were still nice and hot when we got them home. Such a great place to have close to us in Star. Very reasonably priced, fresh ingredients, and very friendly service. Highly-recommended.

Their small street tacos are good, but the inconsistency in maintaining their menu and their hours of operation is frustrating.
