Started the first day of vacation sitting on the patio enjoying the brown sugar latte and an iced tea. [[HIGHLIGHT]]The staff were friendly and the patio was perfect.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]We sat outside enjoying the weather and down town vibes for over an hour.[[ENDHIGHLIGHT]]

Came by for a quick refresher because the yelp reviews were so good and yelp was right! First of all the Hibiscus tea was oh so good! Truly! I am not local or I'd be here often! The service was very friendly and helpful. [[HIGHLIGHT]]The building itself is small but nice. It has some outdoor seating and is really nicely set up.[[ENDHIGHLIGHT]] Will definitely return next time I'm in town.

This is a cute little cafe a block off the main drag in Old Town. I popped in for a coffee pre-farm market on a Saturday. It was going to be another scorcher of a day so I went with iced. The staff were pleasant and welcoming. It is right near a parking deck. Since I was only caffeinating I did not have food but their pastry selection looked nice. There is a unisex bathroom that was clean and tidy Outside there are some small tables to enjoy the early morning shade. A worthy coffee stop.

Tl;dr: the garden sandwich here with hummus is the best sandwich I've had in the US. While that is a pretty absurd statement in and of itself, I can at least offer that I'm not vegetarian and enjoy a good deli sandwich as a food group (and shouldn't be written off immediately for my statement). After all, I have a Reubens spot in New York and make it a point to stop by Bay Cities when in Santa Monica. Yet, truth is truth. The best sandwich in America is the vegan sammy right here at the Butterfly Cafe. My husband and I stayed at the beautiful Elizabeth Hotel in downtown Fort Collins and decided to stop by before we headed to the airport. This café is really a full-windowed concrete hut. A maximum of six people can probably stand inside the café, uncomfortably. The bathroom, in contrast, can probably fit eight people, but that's besides the point. There are two stools inside the sunlit cove where you can squeeze in next to monsteras as well as a handful of tables outside. Perfect for take outs on days when it's 34 degrees outside. The menu options include sandwiches, smoothies, and breakfast classics. My normal go-tos are cold cut sandwich, and while the mushroom sandwich also caught my eye, I felt like going for something light and uncharacteristically opted for the garden sandwich. Hubby got the turkey avocado, and I was asked whether I wanted to substitute the cheese with hummus. I said, If it's good, sure. We were informed it'd take about 15 minutes. We stuck with it. It took over 15 minutes but both were absolutely the right decisions. The kicker to these sandwiches is that they bake the focaccia in house, and it is perfection. Pillowy inside, slightly crispy on the outside. I also adore the copious spread of artichoke hearts bits in the garden sandwich. And the lemony hummus-tahini combo perfectly seeped through the avocado, tomato, and spinach. Oh. So. Delicious. I wasn't even hungry yet ate the whole thing (ok, I shared a little bit). I also drank all of the Green Genie smoothie, which was also delicious. The gentleman who made it called for me, and I said, "Yeah, I know, I got the Genie." He said, "Yeah, I had to double check the name." Well, the Genie and the Garden Sammy both made disappearing acts into my belly. It wasn't me, it was them, I promise.

Breakfast sandwich with a vanilla latte (sub housemade almond milk)

The breakfast sandwich really is the highlight of this place. I'd come back again and again for that. It's got this awesome buttery/fluffy bread, a light scramble, tomatoes, and a spread that gives it that extra savory kick that makes it all come together. It's really special. The coffee? Not so much. I am a non-dairy drinker though, so I had given their house made almond milk a try. They add cinnamon and sweetener in it to try to give the milk some flavor and it did NOT come together. Too many strong competing flavors, I could barely taste the coffee! It's a cute cafe and the staff are super friendly though. And the coffees come in really unique mugs, which I love a good ceramic. I think if you just avoid the housemade nondairy alternatives the lattes would be drinkable. TLDR; Go for the breakfast sandwich for sure, be wary of the milk alternatives for the lattes.

This place was fun and delicious. I ordered the spicy cold brew, and it was fantastic!! The energy bite and sandwich we got were also great. Lots of healthy options.

    Ham & Cheese sandwich

[[HIGHLIGHT]]Cute and quaint cafe in the heart of downtown.[[ENDHIGHLIGHT]] Stopped in for a coffee on a chilly afternoon. Ended up also grabbing the ham and cheese sandwich. Delicious! From the focaccia bread to the mustard and aioli. [[HIGHLIGHT]]The small 400 square foot building offers huge flavors.[[ENDHIGHLIGHT]]

I wanted to love this cafe! It's super cute, the ambiance is a quick grab and go theme. Organic and natural ingredients is the heart of their business. Their baked goods look amazing, and their breakfast/lunch options were great. I base a good coffee cafe off of their vanilla latte, and for me, the latte was very dark and bitter which is why I give them 3 stars BUT once I try their food, I will be sure to report!

The bar almost resembles something you might find in a small European hotel, which may suggest they are aiming for a slightly upscale tone, though it never feels pretentious. The seating is varied, with small tables and retro chairs that seem intentionally chosen rather than bought in bulk. The spacing is better than most coffee shops, which makes it easy to settle in without feeling crowded. The back area opens up even more, and the soft drapery adds a touch of personality that appears to hint at events or just a bit of flair. The staff continues to be the standout for me. Everyone I spoke with was kind in a way that felt natural, and they knew the menu well enough to help me navigate dairy free options. I usually order the avocado toast on focaccia because it is consistently fresh. The bread looks oversized at first but is airy and soft, and the avocado and radish topping feels simple in the best way. The matcha made with water has also become a go to since it tastes smooth and well-bodied without that chalky, thin finish some places have. My partner and I visited during their Dia de Los Muertos weekend and tried a few themed items. Everything was good, and they were quick to suggest dairy free choices. Prices seem fair, even with the general bump everywhere lately. The only thing I wish they had more of is outlets. It is still a nice place to work for a couple of hours, but coming with a charged laptop helps. The overall vibe is calm with just enough energy to keep the space from feeling sleepy. It works well for coffee dates, casual catch ups, or solo work, especially for anyone who prefers a relaxed atmosphere without too much chaos.

Just a couple days ago a friend mentioned Fox Den was one of her favorite coffee places. I guess it was just a little out of the way for me. I didn't make my own coffee this morning on purpose. We were going out to get coffee and a bag of whole beans from one of my favorite FC coffee shops. I suddenly realized I could use this opportunity to finally stop by Fox Den. The SO asks if I want to go there instead. I say yes, but with a little hesitation. I mean how good can this place really be? Will it live up to expectations? Does the "No Waste" theme come at the cost of compromising coffee quality? Upon entering the cafe, I see a wall of mugs to choose from. I pick the Mickey Mouse one. I place my standard new coffee shop order-a cortado and drip coffee. The barista taking my order says that's his favorite mug. The drip coffee comes first. I chose the light roast. It has mild acid, barely perceptible bitterness, and nice smoothe coffee flavor. I really can't ask for a more balanced cup of coffee. One of the best drip coffees I've had in a cafe. My cortado is up. The barista apologizes for his subpar latte art. It's not that bad. Consistently good latte art is not as easy as some baristas make it look, and baristas are allowed to be human. Besides, this is not the Louvre and art is not what I'm here for, no apology necessary. This cortado is excellent. The high quality pulled shots of expresso shine through the nicely steamed whole milk. I have to know which blends they used in my drinks. El Zorro for the cortado and Foxy Gal for the drip. I compliment the other barista on the shop's coffee. She humbly tells me, "the shots are pulling well today". Typically, when I get my usual cortado and drip coffee, one is better than the other, even if slightly so. Not today. Today both are of equally high caliber. It is a good coffee day.

I came here with a partner en route to Laramie WY. We each ordered a sandwich and split their Shishito Peppers and Baba Ganoush. All of that and their mocktails were delicious. I want to come back to try everything else on their menu - from drinks and tapas to desserts. I have my eye on their Persian Love Cake and Tres Leches Cake, which I wish I had ordered to-go. As we were wandering northward someone started suggested G&B. My reaction was absolutely not, why don't we go to Persimmon instead? "Oh, I've heard good things - where is it?" There. "Where?" Right there. "I don't see it." That door directly across the street from us! Persimmon is quite inconspicuous from the street, but is one of Fort Collins' hidden in plain sight gems. That proved to be a good thing on a day where thousands of people pretty much had the same thought of needing something to warm up - while there were throngs at other places we passed by Persimmon was nearly empty. Our group of 6 easily found a comfy spot for our group. It turns out the we beat the lunch rush - it started to get quite busy once noon rolled around. After perusing the menu for warm drinks a few decided they were hungry so food was ordered as well. I had a matcha latte, unsweetened, and it was a perfect choice to warm up after being out in the wind and bluster that morning. They use a ceremonial grade matcha, which I found to be smooth and really not bitter. I also shared a pastrami sandwich with one of my friends - they were nice enough to bring out the sandwich halves on two plates. While not a New York deli kind of sandwich, it was good - quality ingredients on focaccia. They source their pastrami from a specialty butcher in Denver, though I've forgotten their name. Sandwiches are served with kettle chips that are light, crispy, and not too oily. In a previous visit I had their tuna sandwich and sampled some appetizers. The tuna sandwich was among the best I have ever had - I can't really put my finger on why but I do remember that my first bite wowed me. I didn't see the meze sampler on the menu this time, but as I recall the beet hummus was a standout. I don't lunch out in Old Town very often, but Persimmon is always such a pleasure. I need to make a point of coming more often.
