Was looking for a new place to try in Fort Collins as I don't get up here often. I went to FOCO cafe due to its rating but also its social model; like SAME in Denver. Good food, pay as you can including a volunteer job for lunch. Nice. Great stew, salad, and brownie. I'll be back. Might try volunteering for my lunch.

FoCo Cafe has one of the most unique models I've ever seen. Giving back tot the cafe in exchange for my meals gave me a sense of satisfaction and belonging. I've eaten dozens of meals there and they've all been healthy and incredible tasting, and the staff/volunteers are very sweet.

The gyoza came out perfectly pan-seared -- crispy on the bottom, tender on top, and packed with flavor. That dipping sauce had just the right balance of salty, tangy, and savory. You could easily crush two orders without trying. The pork belly steamed buns were next-level. Soft, pillowy buns wrapped around rich, melt-in-your-mouth pork belly. The balance of fat, sweetness, and sauce was perfect. Messy in the best possible way. And then the star -- the Tonkotsu Ramen. The broth was deep, creamy, and packed with flavor -- that slow-simmered richness that tells you it was done right. The noodles had the perfect bite, and the pork was tender and seasoned beautifully. Every spoonful made you slow down just to appreciate it. Hands down one of the best meals I've had in a long time.
