Was so happy I finally got to try Bufalina! I've wanted to. Go for quite awhile, but never had the chance. If small, thin crust, brick oven pizza with fresh (local) ingredients and interesting combinations is your thing, then definitely give them a try. The Margherita and Cipolle were my favorites. The sauce on the margherita was perfect, just a little but sweet, with lots of cheese and fresh basil. The cipolle uses one of my favorite soft cheese from mystic cheese company called "Melinda Mae". It's a soft (almost Brie like) cheese that's not over powering. I never would have thought to put it on a pizza. But there it was, topped with caramelized onions, scallions and bacon....and it was delicious. It was the favorite of everyone at the table. The crust is great, just the right amount of charring. The place is small but still takes reservations and it's byob! It gets pretty crowded but you can also get take out. During the warmer weather they do have a back patio open for additional seating. After reading a great review on CTbites, I decided to make the trip from Stratford on a Saturday evening. I did not make a reservation due to the fact that it was a spur of the moment decision, but I definitely recommend that you do because of the limited seating. Luckily for me, they had two spots open for my friend and I before a large party arrived. Although the relatively small space initially turned me off, I quickly fell in love with it after being able to watch and speak with the husband and wife (Matthew and Melissa) duo whip up our pizzas in the wood-fired oven. Shortly after walking in, I seen one of the girls dressing up a pizza with nutella and powdered sugar. With my mouth thoroughly producing saliva, I hurried up and sat down to look over the menu. The menu has a salad and a selection of about 10 pizzas. We skipped the salad and ended up ordering the Gamberi, which is topped with shrimp, pesto, and pea tendrils, and the quattro formaggi, a four cheese pizza (mozzarella, parmigiano, toma, and gorgonzola dolce) with salame. Matthew cooked our pizzas in about two minutes after the initial preparation by Melissa. I am quite the pizza fanatic, and I have to say that Mathew produced great leoparding, which is a term for the black dots produced on the crust that gives neapolitan pizza a unique flavor that is distinct from coal fired and regular home ovens. Although both pizzas were delicious, my palate enjoyed the quattro formaggi more. The delicious crust acted as a great vehicle for the unique taste of the four different cheeses that ended with slightly spicy taste of the salame that seemed to creep up after each bite. I use to think that I made the best pizza in Connecticut, but I was wrong; Matthew and Melissa do. Give them a shot. I doubt that you will regret it. read more

REAL pizza with fresh, creative ingredients! I had a white pie with fig/Gorgonzola/prosciutto-- YUM. My mom got the Margherita with bacon, also great. All the flavors blended well and the mozzarella was high quality- creamy and full, not salty and soupy like other places. The crust was cooked to perfection, however I do agree with one other yelper that it could have used a bit of salt in it. The pizzas are 8 slices, reasonably priced and bigger than a traditional personal pie. Other than pizza there is a salad option available. Per the owner, the menu changes each season and they have a special pie available every day. It's TINY inside so make sure you call ahead of time to ensure a seat. All seating is at a wrap-around counter top except for a small 2 person bench seat in the bay window. During the warm months you can also opt to sit out back on the lawn. Just a warning, it's not very kid friendly due to small quarters and no tables. This place is more ideal for couples, small groups, or families with older kids. I know that people prob complain about how small it is inside, but personally I think that's what gives this place it's character, uniqueness, and intimate vibe. Came in on the good reviews, left with a couple of burnt pizzas. By the time we realized it we were 10 miles away and hungry as a pack of wolves. We found ourselves eating around most of the burnt bits. The flavor was there and the dough had an interesting consistency but it wasn't worth it in my mind. Additionally, if you're looking to feed a family, this is not the place. They make personal sized pizzas that will, no doubt, fill a single person up. They are quite expensive in comparison with joints down the street. The redeeming aspect of Bufalina is their friendly staff. Nothing wrong there. Absolutely awful experience. The owners are disrespectful to both the customers and their employees. Multiple times throughout our dine in experience we witnessed the owners argue and berate one another. It was uncomfortable. We also witnessed them yell at their employees. Will never be returning. Not to mention the pizza was burnt and there was not much variety to chose from when ordering. There are so many other places to go in this area. I will give Bufalina all the props they deserve for being in papers like the New York Times and so on, but the NYT forgot to mention one thing: terrible and honestly rude service. After sitting for an hour and a half watching people who came in after us be served, we had enough and wanted to leave. We had asked our server if our order was put in and so on, but there was no result so we left. The owner then proceeded to come outside an accuse us of dining an dashing and that he was going to call the cops. First of, you have to DINE to dine and dash. We happily left our 4 dollars for our drinks but we had not been served pizzas, but the owner became aggressive. He obviously did not learn the term "the customer is always right." Anyways, we will NEVER give Bufalina our business again. There are literally hundreds of other great pizza places in New Haven County. Yelp's 1 star description of "eek! Methinks not" does not even cover how disappointed I am in this heralded restaurant. read more

Delicious, creative thin crust pizza. Best in CT- I know! But Pepe's and Modern- those are a different kind of pie. If you're rating by size and gooey-ness then you should get a giant pie at one of those places. If you want a light delicious personal size type of pie with innovative fresh flavors then Bufalina is your place. Tiny/intimate- probably best for take out unless you are a party of 2. I was referred to Bufalina by my husband's co-worker and we were immediately turned onto their idea of simple, fresh ingredients in a small Italy-inspired restaurant. One evening while driving by we decided to stop in to check it out. Small is not even the right word to describe Bufalina. It is miniscule. You could probably fit 8-10 people MAX and even on a chilly evening, it was scorching inside with the built in brick oven. All the seats were taken (and it wasn't exactly kid-friendly) so we opted for take out. We ordered two pizza, both with red sauce. My husband got one with anchovies and I got the house-special Bufalina pizza with fresh mozzarella and basil. I appreciated watching the owners (husband and wife) working together behind the bar to create their individually portioned pizzas. You could sense the care they took to make each other, hand tearing the basil and evenly spreading the sauce. We got our pizzas home and were unfortunately, disappointed. Both of our pizzas were completely drenched with sauce to the point where you couldn't pick up a slice because it just collapsed and poured all over your lap. There were was probably 3 small pieces of mozzarella on my pizza. I realize buffalo mozzarella is expensive but I'd rather pay a little more than receive almost none. The crust was good, very thin but needed a little salt. All in all, I wasn't happy with what we paid for. I really wanted to like it. read more

It's tiny. 6 seats around a countertop bar surrounding the prep area. I've only gotten takeout, but I understand they take reservations. The pizzas are excellent, but small. My family of 4 needs about 2 1/2 of them for dinner. Maybe 2 if paired with a nice salad. The toppings are unusual, but familiar; haute pizza. Crust is thin and crisp, with just a little bit of chew, just how I like it. Hard to compare this to the other pizza places in town, as it's not the same kind of pizza. If I'm in the mood for a more traditional pie, I'll go with Red Tomato. If I'm in the mood for fancier flavors, I'll go with Bufalina. read more

Big let down. The bones of my pie were flat and crunchy rather than light and airy... The way all the previous Yelpers photos would indicate. There is very little seating inside, the chairs don't seem very sturdy plus you will get packed in like a sardine. I think the pizzas are overpriced by about $5. If the ambiance was more upscale I could see the higher price going toward that but in this case it seems to go into wages. There were at least 4 people behind the counter working. My guess is that my pizza was made with dough that hadn't warmed up properly before shaping (explains the flat crust) and that the 4 people are assigned as follows: oven, pizza maker, phone answerer/cashier, and counter server to the 11 patron max. I can see how this place could be rated highly by someone- just not me based on the crust, value, and atmosphere. I'll give you the stand out positives for me. Nice little place. We sat outside (inside looked to be pretty cramped.) It was a nice night, but the place could benefit from some citronella candles or something to keep the gnats at bay. They've got some interesting, novel pizza ideas on the menu. We each got a salad to start, and they were quite good. The addition of hazelnuts was a nice touch. We got a couple of pizzas: the lamb shanks pizza ("agnello" I think) and a clams casino pizza, which was the special. Both came out without much of a wait and had wonderfully thin, crispy crusts. The lamb pizza was different (in a good way) and the clams casino pizza was pretty good, but could have been a little more generous with the clams. I went to Bufalina with a couple of friends recently. I had driven by this place about a million and a half times but had never eaten there, so when my friend suggested it, I was excited to try it. I called at about 5 to make a reservation (thank you fellow Yelp'ers) and I was glad that I did...the restaurant has L-shaped counter style seating so there are only maybe 9 seats. It's really cute. The pizzas are small so it's good to get one pizza per person. We also got a Nutella pizza which I highly recommend. This is a good place to go with a friend or two-- conversation could be difficult with a larger group, due to side-by-side seating. Bufalina would be a perfect spot for a potentially awkward first date. The people making the pizzas are basically standing right in front of you so you could always just chat with them if you run out of things to talk about. Also, it's BYOB. I mention this because I would hate to have you stranded on aforementioned first date without some liquid courage. read more

Over the course of the last year we (2 adults and 2 young adults) have tried all the pizzas on the Bufalina menu. They are consistently excellent. I do add sausage/bacon/salame piccante if they are suggest add-ins on the menu. If my wife is choosing, she leaves them off preferring the unadulterated version - still excellent. We've tried the classic Buffalina several times and while we do appreciate its simplicity and traditional roots, we all prefer the other menu offerings and their unique flavors. I am giving Bufalina 5 stars simply because it's among the best pizza you will find in CT. I have tried all the pizzas in New Haven except Kitchen Zinc, and while it's slightly different than Bar, it's as good if not better. The ambiance is wonderful with the close quarters and the counter-only seating, but admittedly, proper tables would also be nice. I have been here now at least 4 times and the pizza is just consistently great. And if you're like me and typically don't do reservations, I would suggest getting here after 8:15. If Bufalina was slightly larger they would easily fill those extra table for dinner. I personally like the BYOB aspect to it, but I know that may be a negative to others. read more

First time customer. Tried the MARGHERITA and the CIPOLLE for take out. I loved the intimate atmosphere and the owners were friendly and appreciative for my business. The crust was too soft for being so thin. The MARGHERITA had, maybe, two basil leaves on it and very little sauce and cheese. $9.00 for this pie that was barely 12" in diameter is overpriced. The CIPOLLE was much better, but the crust was lacking. The crust needs to be crispier underneath and crunchier on the edge. read more

i really like this place. super tiny, i think it seats 8 people. they do tons of take out. pies are small and not cheap - i think we had 2 and they were $15+ each. byob makes it nice too. woodfired delciousness and funky ingredients make bufalina one of my favorites, but i don't tell too many people about it because it's so small. if you are going you should make reservations! nutella pizza is also sweeeeeet! read more

I love the thin crust and sometimes their pies can be amazing. But I deduct two for inconsistency. The vegetarian pies I've tried are sometimes loaded with veggies and very tasty...but other times the toppings have been scarce. I don't mind the prices if it's made well, but I wasn't happy with the shrimp pesto pie, for $17. I think they forgot the pesto because I didn't see it or taste it anywhere. There were 2 or 3 shrimp cut into pieces, and a huge pile of arugula over the top, no cheese...and that was it. It was a little disappointing. read more

The fact that Matt and Melissa have traveled extensively in Italy and written two cookbooks based on their culinary adventures is evident in their cooking. I wish they did small plates so that I could order one of everything. I recommend going with a few friends and sharing several dishes. Just make sure *you* walk out the door with any leftover slices. Last night we enjoyed the Fichi pie first ( fig, Gorgonzola, Asiago, and prosciutto) and than ordered a pesto pizza . Equally delicious !!! Pies are small so fiqure one per person. Very cozy and friendly atmosphere. it only seats about 10-12 people. What a great little treasure on the shoreline. Matt and Melissa have it down pat. Thoroughly enjoyed my experience at Bufalina. It's a small and cozy restaurant, where you're within reach of the kitchen. You see the magic happening. You see pie after pie being placed in a thousand degree oven. I had the privilege of trying 6 different pies and each one brought something different to the table. This is yet again another update as we finally had the chance to try their pizza. We had the Margherita & the Quattro Formaggi. Both pies were delicious and perfectly cooked. We were able to get there when it was relatively quiet and not packed. Got lucky as they are always busy. Can't wait to go back when the weather gets warmer so we can sit outside. All is good! I didn't let the owners know we were there as to not ruin the vibe due to my first review. With that being said...I always recognize great food and change my reviews when all is well that ends well. By far the best apizza locally, but likely in CT. New York Times article, ranked #4 in New Haven county beating out Modern and Bar... Not much more is needed to guarantee you will walk away satisfied!! They take amazing pride in their work, hold their standards for ingredients to the highest standard (even purchasing products from other suppliers if their usual vender offers them subpar ingredients), and incorporate local ingredients in almost every pie~including Lamberti sausage and produce from Bishop's Orchards. Intimate setting where you can view the crafting of your pie and interact with the owners (who are there every night verifying their product continues to be produced to their exceptional standard).
