Brut is by far the nicest addition to the ever evolving Belgian food scene. Just recently opened in the hip Flagey neighborhood, they focus on a short selection of products with very high quality standards judging by the lamb which was very tender and flavorful. The waitress explained to me the whole Brut food concepts, said the menu evolved every week based on the season and the products arrivals, they work with local Belgian food producers and farmers that share their vision.
I had a duo of white & green asparagus as starter, they came in a nice asparagus emulsion topped with a cress espuma. As main dish I took the Lamb fillet with a crust of squash seeds & oriental spices, the lamb was just fabulous, cooked to perfection served with a sirupy reduction which had hints of oregano.
Service was nice & cheerful and the restaurant is cosy with carefully chosen interior decor.
Overall a great experience, I highly recommend it if you're in the neighborhood! read more
