My husband is a huge pizza fan, so we decided to check this place out after driving past on our way to get massages in the same plaza. After said massage, I was relaxed and decided that I did not want to cook dinner when we got home, so we popped in without having any context on its popularity. The place is really small. There is a bit of counter/bar seating, one large table and one smaller table in the corner inside. Outside, there are 3-4 more tables in a covered area. We reviewed the menu online, as they seemed to only have one printed menu that was being passed around from table to table. We decided on the Godzilla pizza (Pepperoni, Jalapeno, Serrano, Ricotta, Mozzarella, Grana Padano, Tomato Sauce, Pecorino, Mike's Hot Honey, Fresh Basil, Olive Oil). The pizzas only come in one size, so there's no ordering a small pie to see how you like it. It is all or nothing! We sat at the one available table inside with our beverages and waited for the pie to be made. The table was dirty and there were cobwebs in the corner, but as I read the reviews online, I began to get excited for what was to come. It didn't take very long for us to receive our pie (20 minutes tops) and we had to try some fresh out of the oven. The slices were huge, barely fitting on the plate. The crust was nice and crisp. I wasn't really a fan of the fresh jalapeno and serrano peppers (I guess I expected them to be pickled), but they were sliced paper thin. They were all over the pizza. The most generous topping, by far. There was no picking around them, so next time, I would opt to have them removed entirely or at least have them go light on the peppers. They didn't add any spice, in my opinion. My favorite topping was the ricotta. It was very creamy and added a nice balance to everything else the pie had going on. I would try them again if my husband wanted to, but they aren't at the top of my list. Edit: I am editing my review in response to the Business Manager's comment on my review. It was defensive and argumentative in nature, which I deem as bad customer service. I have since posted my pictures from that visit, including ones showing the cobwebs in the corner of where our table was located. Going through my pictures, I remembered that the cheese sauce we ordered was also given to us cold. It took at least 10 minutes to have it warmed and given back to us, and by then the pizza was cold. We boxed everything up and went home, but reheating is never as good as fresh out of the oven. The manager stressed how extremely busy the one front of house person is, so why then would they suggest that we should've asked that she clean our table? We were perfectly capable of doing so ourselves, and so we did. I was simply recounting my true and honest experience, but I suppose that any constructive criticism or less than glowing feedback is not appreciated. Perhaps, with all of your popularity and success you should consider hiring additional help to rectify these issues rather than making excuses and placing blame on an overworked/overwhelmed member of your staff. I love a good New York style pizza so I was really excited to try this place. Our first attempt was a few months ago when they were sold out on a Wednesday night. We actually took that as a good sign of small business success and planned to come back more prepared. We finally ordered for the first time a few months ago and tried the Sweet Pig. It wasn't my favorite. I enjoy all of those ingredients individually and even together in other foods, but on this pizza it just didn't work for me. That part comes down to personal taste rather than a flaw in the restaurant. We gave them another chance tonight and ordered a half cheese half pepperoni pizza along with garlic knots and all three dipping sauces. Overall I would still say the pizza is just alright and not really worth the price. Our vodka dipping sauce was ice cold, and the cheese was also surprisingly cold. We used our microwave to heat them up, then they were great! Our pizza arrived lukewarm. Also, it was inconsistent throughout. Some areas were over sauced while others were under sauced. Cheese coverage also varied a lot, with some slices heavily topped and others nearly bare. The slicing was uneven as well, with some pieces noticeably larger than others. We really wanted to give them a fair shot after the first visit, but this experience felt like it reflected more of a consistency issue. When everything came together in one bite it could be really good, but the problem is that the quality changed so much from bite to bite that it was hard to enjoy the pizza as a whole. We literally had to plan in advance when to get this pizza. Like we ordered it a whole day in advance to pick up at 5:30 PM the following day because it's such a popular place right now. Even before the barstool review this has been on my list to try just from the tons of positive Google reviews. The people that complain about the wait time are missing the point - it's that popular and in demand and a small pizza shop. If you have any ounce of patience, use it and order ahead so you can try it. It's on the expensive side. All said, it's still well worth it. The pizzas are huge and very authentic New York. Hamilton county has tons of pizza places with brick oven doughy crust, but not like this New York style one. It's crusty and thin, but not doughy. Super airy and flakey - by the time you get to the last bite of the crust it's honestly messy and crumbs are everywhere. You could scrape the bottom of the pizza and hear that crackle.The tomato sauce seemed like true tomatoes, not a sauce with a bunch of additions. The Parmesan on top gave it some saltiness too. We had onions, sausage, and pepperoni toppings - they don't overload them, it's like the right amount to be able to appreciate the pizza as a stand alone and the toppings. It's locally owned too and from the interviews I've seen, you can tell they just care about making great pizza and keeping it as simple as that. Overall, I'm impressed. This is an overglorified thin crust pizza. Slap a New York name on it and burn the edges and they think they can charge $35 for one size of pizza. It tasted OK. It's not great. It's good, but it's not great. There's no reason for this pizza to cost $35. That's just some ridiculous Hamilton County bougie spending. For that amount, I was expecting a pizza that would knock my socks off. That didn't happen. I have been to New York many times, and didn't really get that vibe from their pizza. Sure, it's thin and crispy... but some things you just can't replicate. It's close, but I can get a better slice in NY for $2-5. They need to drop their price point to about $25 for this pizza to make any sense at all. You can get a massive deep dish at Giordano's for $26... This is a super thin pizza with hardly any toppings, and it's $10 more. On top of all that, just look at any review that is 3 stars or less and you'll probably see a snarky remark from the owner. Not the kind of guy I want to do business with. If you're going to run a business, you have to be prepared for some moderate and negative reviews... but this guy can't handle it. Instead of learning and improving he wants to argue about the experience people had and make it their fault. (Look for the review where the guy got hung up on and was called a liar... he even posted his phone log!) You probably would have had me as a repeat customer at a reasonable price point and some manners, but it's an experience I don't need to repeat. EDIT/ UPDATE: There you have it, folks. Crust edges are "sturdy" so it's foldable and the toppings don't fall off. Slices are cut so each is very large - to fold of course. The volume of toppings are "balanced" to not dominate the taste nor appearance. The sauce is designed to be more tangy and less sweet. Lots of fresh mozzarella cheese to pull everything together! This Sweet Pig pizza was delicious! The sweetness comes from a honey drizzle. It is aided by the sweet fig jam. Applewood bacon provides the "pig" flavors. There aren't many other toppings by design. The pizza has a nice bed of mozzarella with dollops of ricotta cheese. The crust is almost wafer thin and crispy - if you like that. I ate my slices straight up without folding them. Overall...a Brooklyn style Sweet Pig pizza was really good! The cheese sticks were outstanding. A thick stick with a slight buttery-garlic baste. It's baked to a slight crisp. The ambiance is that of a busy pizza shop with a few tables for eating in. The pizza in my opinion was good, flavorful New York style pizza. They have some signature pizzas on the menu. They did not have a meat lovers pizza, but they were flexible to fix me a pepperoni and sausage pizza with mushrooms on half. The pepperoni was spicier than what my husband likes, but I thought it had good flavor. I liked the crust under the triangle of pizza, although I found the crunchy crust edge to be too crispy and chose to not eat much of it. The char flavor is delicious. People who came in after us were told an hour and a half. The solution, if you're dining in and starving and can't wait, is to order an appetizer, because those come out relatively quickly. We got the garlic knots: 8 delicious bread balls covered in garlic and butter, which come with marinara sauce. These were so delicious! It was so satisfying to pull apart the knots and eat the layers of bread little by little. We ordered the pepperoni pizza, and the pepperoni they use here are my favorite kind -- the kind that turn into little, crispy cups that hold the pizza grease. Even my pepperoni-hating son likes these kinds of pepperoni! Another thing to know: There is one size of pizza. It's extra large, with 8 huge slices per pizza. Even though it took a while for our pizza to be ready, the wait was worth it! This is the kind of pizza that I like: The crust was slightly charred and crispy from the oven, and the cheese was nicely melted, and had that satisfying pull. It's the kind of pizza that's best eaten at the restaurant, because you want to bite into a hot slice as soon as possible, even though it burns the roof of your mouth. Speaking of dining in: Brooklyn Char is tiny inside! There are very few tables at which to sit. Because the interior is so tight, it's a little difficult to navigate -- you're maneuvering around seats to get to the ordering counter. First we noticed their very small menu, we knew with this small menu it had to be good and so we ordered their whole menu. Literally! I have to say it was BOMB! Pizza is awesome, but the new customer experience is a bit lacking. It's impossible to get an order in here on a busy night without ordering at least 6 hours in advance. If you're trying to order food here on a weekend night you will probably have to call as soon as they open or order online during the morning hours. They are just so busy that they won't fit you in otherwise. There's not much of a way to know this without going in and just trying to order which will probably result in failure the first time, which is a little frustrating. Not sure what can be done to improve this. The pizza is incredible though. Some of the best crust I've ever had, and the flavor is a bit of a craft experience. I've been wanting to try Brookyn Char for a while and so when my husband and I got back to Indy after a long flight from the west coast, I finally got around to it. I tried calling the shop first because I had a question about customizing an order. They answered, put me on hold for 13 minutes, and then I hung up. When I tried calling back the phone didn't ring and it just kept saying the voicemail hadn't been set up. Because of this, I ordered through their site. Once we arrived we were immediately greeted by a friendly employee. I told her I was early and didn't expect my order to be ready and she let me know it was still being worked on. We took a seat, and our order came out about 5 minutes after the expected time, which was no biggie. The slices on this pizza are huge, and truly NY style. We had the Godzilla and I loved it, but be aware, it is HOT, and my husband couldn't handle all of the peppers so he took them off and I ate them. The pepperoni are cupped and top quality. The peppers with the hot honey is the perfect combination of sweet and spicy. I also really liked their sauce and cheese quality. While I enjoyed the crust, I would say it's a bit on the chewier side for me, making eating multiple slices a bit laborious after a while. I wish it was a tad bit lighter/crispier. I'm an East coast transplant, grew up in Philadelphia and 10 years in NYC. I've been disappointed in the pizza selection around Indianapolis and was excited to try Brooklyn Char, especially since I live near the new location. After three visits, an honest review. The two fundamental parts are pizza are the dough and sauce. Here they really hit the mark. Dough is great, light, crispy, and a really nice cook. The sauce is also right on, tangy, not too sweet, fantastic. Then there's the cheese. The only thing to get wrong here is the proportions, and they miss the mark. Before the oven it's hit with both shredded and cubed mozzarella. It's just too much and weighs down the beautiful crust. The real sin though is after the oven. They fresh grate an egregious amount of Parmesan on top. Not only does this slow down the expediter, it all just melts down on the already too much cheese and makes the pizza almost unpleasant. I asked for "light Parmesan" upon ordering, but of course the expediter didn't look at the ticket. I was watching so was able to stop him from implementing the parm downpour, toning it down to a light mist. Pizza was much improved without it. My advice to the owner, cut back 30% on the mozzarella. Have the parm pre grated and give the pies a one hand sprinkle. You'll cut down on food cost, expedite faster, and put out an amazing pizza. Probably should figure out a way to prep the basil better too, watching the expeditor snip snip snip snip snip snip snip snip snips snip on to the pizza is torture. All in all I'll keep going back. I'll be sure to get there before it's ready and watch to avoid the parmegedon. Maybe ask for light cheese too. Also call ahead and order early. They really back up on busy nights. Good for them. If you have to wait for the pizza, that's probably a good thing. Wish I could give it 5 stars. But the cheese issue drops a star. It's an easy fix, I hope they make it. read more
