Laura's husband dropped off the meal right on time, with instructions on how to heat up the entrees which was quite easy. We enjoyed a few appetizers (multiple people said it was "the best eggplant dip they had ever had"), then sat down for a beautiful meal with an amazingly fresh salad and delicious entrees. Well, my staff didn't disappoint, as usual, and neither did Diamond Catering. There are only two other reviews, and both with five stars. As much I tried to find reasons not for five stars, I could not. They truly do deserve five stars, and here is why. I will admit that my event was extra challenging, as catering was ordered last minute, and we had a number of hoops to jump through. That being said, the staff was very flexible and accommodating. They were never upset or fussy with our last minute challenges. Instead, they did exactly what we asked. How about that for change? So, to the food. I wanted the participants to have a great full breakfast, awesome lunch, and nice reception with open bar in the end. My staff ordered, and they provided exactly that, and the response from the meeting participants was "two thumbs up"! I won't go into too much detail, but the breakfast was full of fresh fruit, potatoes O'Brien, hickory smoked bacon, maple sausage, assorted pastries, and best of all baked egg strata with a very nice cream sauce, not too mention plenty of coffee, which tends to run out quickly in an event full of techies. Lunch was well, just as awesome. Cider Mill Salad, smoked gouda mac and cheese, roasted veggies, vidalia chicken, bourbon beef brisket, house rolls, cookies and brownies. I didn't get to try all, as I was so busy, but I will say, one attendee came up to me and said, "These brownies are fantastic. This is one of the best brownies I've every had." Well, I couldn't try them, since they were all gone, but I guess that shows you how good everything was. I would use these guys again, anytime I am back in Syracuse.
