Not sure this is a good thing as, surely, most people choose a venue on it's food and this takes away that choice... They do offer a Dining Club discount on food (must include a main course) of 10% - this is Monday, Tuesday and Wednesday and 'a steak for a tenner' deal on Thursdays. The whole pub is undergoing refurbishment in early 2024 inside and out which is great news as it was looking a bit tired when we last visited. Better weather sees the use of the large field for parking and al-fresco dining which proves very popular, especially at weekends as the pub is located in the South Downs National Park and is just a (steep) walk from the South Downs Way.

It was not yet 5pm on a Wednesday evening. The guy at the bar asked if we had reservations, which we did not but they did have space to accommodate us. Now you may be wondering about the food. I can confidently say that this beef Wellington was one of the best I've ever had in my life. It takes 30 min for them to make it but it's well worth the wait. I've been to Gordon Ramsay's in Vegas. I've dined in Michelin restaurants. This was better. The filet was melt in your mouth perfect medium rare with a great wine sauce. The puff pastry and mushroom layers complimented it so well and if you can see that technique, no air bubbles between the meat and the pastry. Service was good. The fish and chips were average at best. The triple cooked chips were hit and miss, some perfect and others hard in the center like day old roast potatoes. The menu is simple and perfect, a choice of a 6 course or 8 course tasting menu; with a wine pairing option. They will happily alter to suite vegetarians etc. Everything we had, from a light broad bean and mint velouté soup, 20 minute sugar/salt cured fresh mackerel blow touched to crisp the skin, local beef and two deserts was outstanding. The staff were very professional, knowledgable and helpful. Decor is modern, clean and very attractive. There is absolutely nothing I can say negative about this place. Apparently others feel the same way, it is becoming extremely difficult to get a reservation. Interestingly the kitchen is open and a hive of activity. Steven Edwards (an award winning British chef) and his team clearly know what they are doing and are not afraid to experiment and surprise. For example; bread is a light, warmed brioche bun with a glossy Marmite glaze. Absolutely stunning, especially considering I do not like Marmite! My wife, daughter and me spent a very enjoyable 3 hours dinning at Etch and left very happy and pleasantly surprised. The 8 course tasting menu is not over indulgent, just right for anyone with a normal appetite. You may have noticed all my reviews to date on Yelp have been 5 star, this is deliberate. The dish that you really have to order if it's your first time at the Vardar and you might never come back (you fool!) is the kleftiko. (This dish is also widely known, at least in my other half's family, as 'Kalashnikov' - har har!) It consists of a lamb shank cooked according to special (secret?) Greek methods and is utterly, utterly melting and delicious. The meat is so tender you barely need to chew, you could just bite and swallow. All the accompanying vegetables are also delicious (especially the fabulous fried potatoes), but the lamb is the centre and the star of the meal. Do not delay, book in today!
