We visit Italy twice yearly and I can say with certainty you will NOT find more authentic italian meats and cheeses than you will at Alle-Pia. Their Prosciutto, direct from the source in Parma, Italy, is by far the best and tastiest you can buy on the central coast and their Copa, which they make themselves locally, is absolutely delicious. As far as cheeses go, their truffle pecorino is literally to die for. And anyone who tries Nduja for the first time will get hooked on it. I first experienced this Calabrian delicacy in Tuscany on pizza and was super stoked to see that Alle-Pia makes their own as it's extremely hard to find outside of Italy. Eric, who works there, is super nice and helpful and will always give you sample slices of whatever you're ordering. He also makes fantastic handmade crostini himself. And when Tess is working their (the daughter of the owner), I enjoy getting to speak some Italian with her. All in all I can't recommend this place highly enough to buy your authentic Italian products. Between Alle-Pia and Etto, we're pretty much set.

I was excited to get meat with sourcing I could trust, but I don't know what could be going on that the meat is arriving already old. Not fancy marketing good. Not boutique pricing theater. Just genuinely excellent and honest product. The quality is outstanding across the board, but the beef is the real tell. The flavor actually comes through. You can taste how the animals were raised. It's clean, rich, and honest in a way that grocery store beef just isn't, even at the higher end. Steaks cook beautifully (please temper them properly ). Ground beef has structure and depth instead of that ubiquitous, sloppy gray taste you are used to. Everything arrived exactly as it should. Well packed, still frozen, zero drama, and earnestly branded. My friends were delighted with the same experience in LA and Phoenix. Which matters. Shipping meat is one of those things where you immediately know if a company actually knows what they're doing. It feels good to support this kind of operation. Local ranches. Real people. A supply chain that's short enough to trust. You're not just buying protein. You're putting your dollars towards a way of doing things that should still exist, but is remarkably hard to find.

The flavor is utterly amazing and I have yet to marinate anything that I have purchased. My go to is to use coarse Celtic salt sprinkled on the cut while it's warming up to room temperature, rinsing or scraping it off when room temp and then placing the cut in a preheated pan preferably cast-iron, but not necessarily. It's a little bit of a learning curve so starting with the fattiest cut first (ribs was my choice) instills confidence ! Estimating my cooking times: half inch thickness about two minutes each side, 1 inch approximately two-three minutes each side and 2 inch fillet a good 3 1/2 minutes each side ( all in preheated pan and at room temperature ) Be sure to let it rest for 10 minutes after cooking ...if you can't help yourself, I'm sorry , I've also been in that predicament lol however it is worth the wait. I have also tried their chuck roast in a crockpot on low and just kept checking on it (again it was hard to be patient) and it too was found to be marvelously tasty and tender without pre-marinade or special seasonings. You may find other cooking recommendations on Utube for grass fed and finished beef for consideration . I have found that starting out with a real quality product is the first step and I would definitely give this farm 10 stars if possible. Terri thank you so so much. Justin the owner is often present himself and is always making sure the food looks and tastes top notch. The oak BBQ'd meats are delicious. He often pairs the taco or sandwiches with a grilled jalapeño pepper or pineapple to take things up a notch. He was also recently at Atascadero Irish Festival serving corned beef and cabbage. It was fun and tasty. He also had shepherds pie that looked great but they sold out before I could get any. Great guy, great food. Don't be afraid to stop by or grab some food when you see him out at events.

So changing up my entire diet was something i had no choice over i'm 100% positive the keto diet I was on nearly killed me. Actually keto made my cholesterol rise by over 100 points!! It helped my stomach issues but screwed my health and my cholesterol up to a dangerously high level. So bad that i felt sick all the time I was on Keto for over 9 months. So i turned my diet around to be based on fresh veggies, fruits lean protein and whole grains with healthy fats and lower carb. This delivery program they have has helped make the change painless because of the exceptional quality and variety. Local grocers here where i live mostly sell crap! It looks good but tastes bad and expensive for the small quantities you get. And truthfully has been sitting in storage for quite some time. I came across Talley farms by accident i was looking for a better provider besides Imperfect foods. Their quality and prices are insane now and not worth what they are charging and a lot of their produce is imported from mexico and other countries a lot of the time which is a no no we live in the Ag hub of the country! So when i found Talley i loved that they only have local produce, Fresh picked, organic and in season! And i must say my god the difference in taste of farm fresh produce cannot be compared to store bought!! Even with something as simple as grapes right off the vine GASM!! Gorgeous fruits and veggies from this awesome group of farms!! They are the sweetest people!! They respond quickly to your emails and every delivery is correct! They send recipes and ideas for what your box will contain every week which i Love!! You can also replace things you don't want with other items or extra of something. You can also add additional in season fruits, veggies herbs etc from the available list in your email. I needed extra lettuces for my guinea pigs one week and she graciously replaced my cauliflower with tons of beautiful red little gem lettuces!!! I know most people don't get excited about produce but i'm telling you when i open my boxes from them i'm excited as hell Lol!! I am gushing about them because i truly believe they've got something great here and i'm so thankful i found out about them! I think it's offset by knowing that the produce & meats are very high quality. We were staying nearby and needed to pick up a few items for our stay and decided to check out Spencer's. I'm glad we did. It's such a lovely community market. And they had a small farmer's market going on just outside that added a whole different shopping experience where we were able to pick up some things that we knew were grown locally. The selection isn't as massive as a chain market, but they will have just about everything you would ever need. From cereal to alcohol they have it all. The customers here were all so lovely. Several times we walked by a few just chatting away. You can tell that this is a local gathering place for the locals and that only adds to the charm. The employees are nice. Once again, they feel like they're all locals. It was a short trip for us to pick up essentials. But it only took that short trip to fall in love with this place. We are in the area maybe once a week and we will absolutely be coming here every time we stay from here on out.
