    Smoked Prime Brisket Burger

    Came in on a Monday afternoon and the service was great. The store itself wasn't super busy but honestly, I really enjoyed that since we got extra attention from the servers the food came out fast and was delicious. The espresso martini shots are a must. I also had two margaritas which were delicious and I ordered dessert to go the banana cake and it was good. Server also told me that they are dog friendly so I will definitely come back next time and bring my dog in. They also have specials throughout the week which also offer great deals. originally we came in for the soft serve margaritas, which was only served at the Dallas location, which was a misunderstanding but instead we had great food. Great drinks, and great service. Prices aren't bad! Monday burgers are 7.99. Cocktails $8.

    First impression is this is more "bar" than "restaurant". I didn't see anyone eating when we arrived at 7:00pm. For the record we came for both BBQ and whiskey tasting that was happening at 8:00pm. Unfortunately the server knew nothing about the tasting. She conveyed it was just for invited guest so that's why she didn't know anything about it. Well, if you consider the invite was published on Facebook and everyone was invited... Moving on- The ambiance is definitely "bar". Lots of booze on the wall behind the bar, many beers to choose from on tap and in bottles and cans. High top tables almost exclusively. There were some half-booths in a back room. I'm not a fan of the high top tables as the chairs tend to become uncomfortable after an hour or so. But I get it- it's a bar vibe. We ordered various combo plates that included pastrami, brisket, pork belly burnt ends, and various sides like fries and glazed carrots. Also the deviled eggs as an appetizer. My impression was the pastrami, a very thick slice, was tasty, but served on the "less than warm" side and was kind of tough. I prefer food to be hot or at least very warm. So this was a disappointment. It was also very dry, so I suspect it had been pre- sliced, which is not good for bbq. The pork belly burnt ends were large cubes of pork belly that were probably 2 to 4 bites each, depending on how big a bite you want to take. It required a knife to cut which is not a great sign for pork belly. It was also served "not hot". I'd rather see smaller bites and served very warm to hot. Again, probably pre-sliced and smoked that way, then reheated. I feel this is the problem: they don't serve enough of any particular bbq item to keep it fresh, in a warmer, wrapped, and sliced to order. Too bad as the selections all sounded great on the menu. On to the sides- the glazed carrots and fries were both excellent. Best glazed carrots I've ever had. Deviled eggs: panko breaded and fried the hard boiled egg half's then filled. Served warm. Predominant flavors is like the yolk from an old hard boiled egg that's been in the fridge a while. Loved the concept but flavor not to my liking. I took one home and later ate it cold out of my fridge and it tasted much better. IDGI. Desert: cake was delicious. I did t care for the topping. At 8:00 pm folks from Milam and Greene distillery stopped by and introduced themselves and said we could have whatever we wanted from their brand- shots, cocktails- on them. They were super nice. I highly recommend their Port barrel finished Rye.

    Horrible BBQ. Take a look at the dry, undersized, and lean order that was supposed to be 1/2 lbs of Prime Fatty Brisket. This place is trying to get one over on its customers.

    Filthy restaurant, mediocre food. Floors were sticky and windows look like someone got murdered covered in splatter. Bbq isn't any better than dickies. Can only imagine how bad the kitchen is.

    Usually, when I order a brisket plate, its contents alone usually satisfy my appetite. If it was not for the fried okra, the amount of brisket and the slice of Texas toast would not have satiated me. The pickles and red onions must have meant to be garnishment. Unfortunately, I did not realize I was overcharged for the beer until I was home. When I ordered my beer, I pointed to the Yuengling Traditional Lager on the printed menu priced at $4.50. On my bill, it shows Yuengling Flight Draft at $6.50. Fortunately, I only ordered one glass; otherwise, the overcharge would have been multiplied. As for the service, there were several regulars at the bar. Sadly, the bartender paid more attention to them. For instance, she never came to check on me to ask about the food or if I needed anything else.

    The appetizers and drinks were spot on delicious :). Burger didn't really taste much yet was made from brisket, so I'm surprised there wasn't more flavor. Our server ended up being the manager cause I think the waitress was new and overwhelmed. Manager was very polite and knowledgeable about the dishes and drinks (but he was the manager, so I'd expect no less, lol). This was the first place I'd been to that tried to gouge on tipping. They might need to pay their staff more if they need the customers to give 35% tip to their staff. We probably wont be back unfortunately, cause it was a decent place and open late, but I'd have just gotten drinks if I'd known they'd make me feel bad for not giving 35% instead of the usual 20%. It was around 8pm when we went so it was quiet and not very many people. Clean and lots of TV's.

    The worst BBQ that I have ever had. The fries are average at best. Mac n cheese tasted like it was from a box. The pulled pork comes pre sauces and is terrible. The brisket had no flavor at all. The portions were incredibly small. For $60 between two people... I'm super pissed off.

I was about to leave and she assured me that it would move fast and not to worry and that they had samples to ease some hunger while waiting. Sure enough, she was exactly right! To top it all off, after we got our food and sat down, she actually went above and beyond to come over to our table and check on us just because I had called to thank her for helping me from not leaving to the amazing customer service she provided. I let her know that is very rare now days and not to ever change that! I found out after meeting her that shes about to head out on maternity leave soon and honestly, I'm going to be a little sad when she leaves! She is a massive asset to the Hutchins team and can change the mood just by her smile and friendliness. Not only that, she gave a lot of good recommendations for trying some new foods at Hutchins and every time has been a good call! Give this girl a raise!! I wish Kayla the absolute best and I'll definitely be looking out for her when she gets back! Our server, I believe her name is Cynthia, was also fantastic and made sure we had everything we needed at the table. Nonetheless, it was well worth the drive. Despite it being around 2-3 PM, there was still a line out of the restaurant. The inside was bustling. Almost every table was filled. And for good reason. Thankfully, my friends had already made it so I did not have to wait in line (thank you if you're reading this hehe). For a group of six, we got the Family Pack. It's advertised to feed 3-4 people. It definitely was more than enough for us. Though, we also did get some extras. Our spread included some jalapeno cheddar sausage, brisket, pork ribs, Texas Twinkies, and beef ribs. Sides included french fries, green beans, coleslaw, creamed corn, and mac and cheese. I honestly did not have any personal complaints about any of the meats or sides. Some of the group did feel that there was too much cream cheese in the Texas Twinkies. I respectfully disagreed. Sure, it's quite rich but that's the point. Out of the meats, my favorite was easily the brisket. It's exactly what you envision and want from Texas brisket - smoky, beefy, and with the perfect balance of lean and fatty texture. My favorite side would be the creamed corn. Although still rich, the sweetness and velvety texture was an appreciated break amidst the smorgasbord of meat. Lastly, can't finish this review without mentioning the desert. Complimentary all-you-can-eat self-serve dessert that is. Featuring banana pudding and peach cobbler, if you weren't already in a food coma before, you'd definitely tip yourself into a comatose state at this point of the meal. Like with the rest of the meal, both desserts were delicious. Nonetheless, if I had to choose between the two, it would be the peach cobbler. Especially when paired with the ice cream. Perfection. All in all, I can see why Hutchins get the hype that it has. Well deserved. I look forward to coming back one day!

After paying, I made my way into the main dining area and selected a high-top wooden table along the wall that was, shall we say, very awkward to sit at based on how the stationary stool was positioned in conjunction with the table, so I moved to a nearby regular table that was just fine. There's plenty of outdoor seating, but based on the temperature that day, I chose to stay inside. Digging in, I found the pulled pork to be good, but it was a little dry and salty. The standard house BBQ sauce was good, though, and the corn on the cob was very nice. The cole slaw was about what you'd expect, and the custard pie was tasty, even if it wasn't the best I'd ever had. The sweet tea was excellent. What I probably loved most, though, was eating all this in that environment, with the Texas-American paraphernalia hanging on the walls and a radio station playing nothing but 80s and 90s country music over the speakers--the years when I loved country the most. I wanted a BBQ experience as big as Texas while I was here, and I got that. For that reason, my visit to Hard Eight was a hit, and I will happily visit again on a future trip.

So I leaned over to the table next to us and ask if they were still waiting on their food since they had been there a while also and they said yes did you also order the pancakes? Lol We laughed and said yeah but we should get the rest of our food no? they ended up leaving. About 10 minutes later another waiter comes and asked if the manager had spoken to us. Nope just a waiter. So he goes to get him. He comes back 5 minutes later cause the manager was helping to cook and would be with us soon. So we def in well over an hour now. Manager finally comes and is the most apologetic he could possibly be. Told us straight up our other food was never made and he would make it right now. And he would comp our meal. So that was already a really good turnaround. But when he brings the food out he also brought us a rack of pork ribs because the initial employee we talked to told him about us wanting to try the pork ribs another time and he just gave us some. Could really not have asked him to have done more to make up for everything. That alone will make me return to this location a lot. Food was fine but their courteousness and willingness to make the situation right and go beyond earned a customer for life.

Of the items served, I enjoyed the macaroni salad the most. It had plenty of flavor. The Kalua Pork which were not soaked in cabbage juice had an okay taste. Not only did the breading on Chicken Katsu provide flavor, it protected the chicken meat from being soggy. While a fork was served with my food, I had to grab a knife from the dispenser. The Chicken Katsu could have been eaten with a fork alone; the cabbage would have been difficult.
