The staff and owner are fabulous - this last time I took my daughter (who recently discover cheese) to find out which one she liked most. An absolute hidden gem in babylon! They have an enormous cheese selection and the staff is extremely knowledgeable with all options they carry. I was so impressed with all the amazing products they also carry, such as honey, spreads, crackers etc! They offer tons of options for cheese platters and my favorite thing of all, they offer grilled cheeses! Overdue review I was obsessed in finding a caterer that did 'grazing tables' out in LI for my 50th Bday. I was very lucky to find Babylon Cheese. While the grazing table was unavailable my party day, the platters they made for me in lieu, were absolutely incredible. My experience with Jessica, was just amazing - from the day I came in to plan my platters, up to the point she came to deliver them on party day. She sat with me on planning day for over an hour, picking and choosing cheeses and accompaniments. She was so helpful, and made the very overwhelming task for me, super fun and easy. It was an extremely cold day today when we meandered into this quaint little store in the village. We were grateful for the heat but even more so for the warm friendly smiles & hellos that greeted us. There was a nice array of cheeses but I was surprised to see many other items were available. They had Cornichons, Jams, Crackers, & more even a favorite of mines Duck Rilletes! I settled on the Humboldt Fog, which was stronger & more tangy but creamy on the tongue. Stevie got the Drunken Goat which was firm but creamy. Both delicious! We were able to taste many cheeses until we found the ones we wanted. Nicole was extremely helpful in this process. As we were about to leave we noticed Nicole was wrapping up some Prosciutto. So she gave us a taste. It was not aged long so it was sweet, mild & not as salty as older Prosciutto. Quite delicious! Yes we took some of that also. Wonderful experience. That's what shopping small businesses are all about. It should be an experience not just a transaction. Is it weird how much time I spent in this cheese shop?? I grew up in the area but since moving out of state about 10 years ago, don't really spend time exploring the new local places when I'm in town. So glad my husband noticed this place and suggested we drop in. The selection is superb, like a proper European cheese shop. The samples are ample and varied. And the owner and staff were so knowledgeable and seriously passionate about good cheese and their pairings. Their cheeseboards look stunning and I'll have to order one someday. As we were waiting for our cheese to be wrapped, some teens came in (unusual, not really your typical teenage scene right?) and ordered some grilled cheeses. Say what?? Did not even notice the giant menu boards focused as I was on all the beautiful cheese in the cases. Uh yes please. The woman kept apologizing that it was taking a long time to get the cheeses perfectly melted. We were in no rush, and clearly you can't rush perfection. If you want to try something else you see in the case, they will gladly cut the cheese for you and allow you to sample it. Yes, I'm aware I used "cut the cheese". I like cheesy humor. They don't carry Emmentaler, but that's okay - the delicious gruyere makes up for that. Additionally, they sell olive oils, jams, little snack crackers and the like. The sandwich board outside has bore the slogan "Sweet dreams are made of cheese, who am I to dis a brie" for a few months. It's cute, but it's been the same for awhile so I think they should update it. Lots of cheese, but don't let that fool you. Two things right off the bat. While I was waiting to be helped, I noticed the owner preparing meats and cheese without gloves. Not for nothing, but there was a sink right there in front of her. They did have a great selection of cheeses, but their so called "fresh mozzarella" was anything but that. They have such a beautiful display of cheeses, speciality meats, nuts, etc. the staff is extremely kind, knowledgeable and takes their time helping you with a selection, which is perfect for me because I'm extremely indecisive because I love all cheeses. I stopped in on whim to find some mozzarella to use for making mozzarella sticks.  I was told that, although they have mozzarella, it wouldn't work well for making mozzarella sticks, because of the moisture content.  I love the honesty! I would have just grabbed a slab of cheese, only to be disappointed later. It didn't matter though, because I ended up buying several other cheeses - mainly because they smartly put out samples of everything!  Each time that I thought that I found one that I liked, I tried another one, and added that to my order. This store opened up in Babylon Village right before Christmas 2011. They are expensive but it's worth the money so I don't stop in all that often. The owner knows his cheese and will offer you a tasting of anything you consider purchasing, in general he's very nice and will give you a tasting even if you don't buy. You can still buy some cheese and pay less if you opt to get 1/4 of a pound of a certain cheese, and you can share 1/4 pound between 2 or 3 people. They have fresh mozzarella available and it's usually $5 which I think is cheaper then some supermarkets. This is a great store and I hope it stays open so I can come here for many years. read more
