At higher temperatures, more catechins and tannins dissolve quickly, creating a bitter, astringent taste. Lower temperatures favor L-theanine, the amino acid that gives tea its mellow sweetness and calming effect. The balance between the two defines your tea's character. Taking hot water plus a dash of cold really helps. No amount of sugar can fix that bitter taste. You can't put that note on the app. Research shows that brewing green tea at lower temperatures (around 70-80°C or 158-176°F). The place looks trendy and their service is pretty quick.
