The richness of the flavor and the texture which is not reminiscent of the traditional roasted duck or foie gras, but rather a much more like a luxurious and indulgent version. We enjoyed our dinner on the outside of the restaurant after about a 20-30 minute wait. The bone marrow had the best flavor I've experienced for the dish. However, it is definitely overshadowed by the rich flavor of the foie gras. This experience was unforgettable, with our view of Parisian streets on a brisk, April night. We even came back on our last night, but didn't realize the hours on Google maps was for the deli. The restaurant closes earlier, before 9:00 PM. This meal got us thinking about Paris in a positive light, and we hope to be able to come back to eat the amazing dishes again!

First, the cheese failed to emit the baked, melted gruyere cheese, there is no aroma at all. I don't think they used gruyere cheese. May be mozzarella cheese. The worst part was the bread in the soup. It tasted stale which ruin the flavor of the soup. I had to finish without the bread. Escargot - Another disappointment. What made escargots special was the garlic butter and herb. Here, there were the herbs, no garlic, and French is famous with their butter but I taste oil but not buttery. Other places I actually get excited dipping the bread into the garlic butter but not here. Pan seared Foie gras - The quality of Foie Gras was definitely there. It's not as well seared as I hope but they managed to cook it through without overcooking it. The size of Foie Gras is kind of scary, it's like a small piece of rib eye steak. With just the onion soup and Foie Gras, I could barely swallow anything. Generous portion.

Foies gras for starters and a couple of delicious "fillers", that cleansed our senses, readying us between courses, were as delicate as they were unexpected. We chose wines from the high end of the price ranges - which was very close to shop prices. Either they're really good at wine shopping, foreseeing enough to buy well in advance or they just don't add a lot their price. In any case delightful to be able to taste expensive wines without bleeding - which gives them the fifth star - it's really good value for money. We sat outside and the hot summer exploded into a rain festival - which was not problem at all, as the massive umbrellas provided sufficient shelter for all of us 9 guests. The waiters managed to cover all servings of courses at the cost of soaking themselves. That's commitment. The desserts were slightly less convincing than the starter and main course - hence the introduction, almost perfect. I know it's not very French to give a tip but I was really impressed by the food, wine and they were very service minded, so I tried to convince the waitress to add 10%. She downright refused. Told me to go elsewhere with my fancy manners. With a a smile that convinced me to come back. The restaurant has an associated hotel which I will give a try the next time we're in this area. The service was attentive and responsive... not much more than you could ask for. I had the duck breast being offered... it was served alongside crispy potatoes, green beans, and a salad. The desserts are also excellent, even if standard fare. The atmosphere inside the restaurant is updated and convivial. I was desperate to find a good restaurant in Soissons -- this was the best I could find, which surprised me because most French towns of this size would have more options. As I was seated I noticed that there were already two corn bread muffins and a carafe of cold water waiting for me. It was a nice touch to already have them there. I ordered a Mojito as my aperitif and it was excellent! Because I was trying to eat light, the waiter helped me out by getting a larger dinner salad made for my appetizer even though it doesn't appear on the menu. I ordered the chicken breast with cheese sauce (Maroilles) and rice. The sauce was the best part, but really, it was "meh". Two large tables came in shortly after I arrived and although the waiters were constantly busy and friendly when they were waiting on me, I ended up having to wait much longer for each course of my meal, for the coffee afterwards, and for the check. Organic and local cuisine from other good places we were like Meline Boulangerie. They prepared a special healthy chicken and vegetable dish for my 9 year old with special sauce which she loved.
