We had a…read morelist of places that we wanted to try in Epernay, but some of them are closed in Sunday and we had a bit of trouble making reservations due to the language barrier. The style and decor of this place is a bit dated, but I'm not sure if it's old or purposely done that way. When we walked in, it was empty, but it filled up quickly. I think we were pretty much ahead of all the crowds by 30 minutes everywhere we went. You have the option of 4 or 5 courses, cheese course is included with either choice. I think every table we overheard asked about portion sizes and whether they should choose 4 or 5. 4 courses is plenty of food, but you should choose the 5 cause you're in Champagne, so why not. The sauce for my langoustines was a bit too fishy for my taste, but my fish and beef dishes were both really good. And tart for dessert was delicious. The French really know how to do pastries. They don't do wine parings, so we were recommended a bottle and it went very well with the food. We did learn that the champagne that is aged in oak goes better with food. As a brand new restaurant people need to be patient with the wine list as it improves over time. The foundations are amazing however, and the greatest of wine connoisseurs must appreciate a solid foundation for a wine menu. Symboise has done this with their selections, from affordable common and grower producers to amazing finds like Jacques Selosse. While Selosse is going to run you into the mid 100 euro area it is well worth the investment, since how often are you in Epernay? The second thing that I found charming and great about this restaurant is that the host/server/bartender was the wife of the chef. It is a locally run business by two young people who are actively working hard to make their mark on Epernay through amazing food, service, and wine. They speak very good English by French standards, and my wife and I had no trouble conversing with them both about the restaurant, food, wine, and life. We found out that the Chef went to school in Paris for his culinary diploma, and they had moved to Epernay to establish themselves as a couple after being married about one year ago. Okay.... now that you have ALL that back story (and there is much more I did not share) it is time for the food. You can choose from an assortment of "Pick your own" style Prix Fixe menu. Prices are moderate considering the rest of Epernay, but I can guarantee that their prices will increase as time goes on and people find out how amazing this spot is. The value is absolutely present here. We started with a pumpkin soup for my wife and Foie Gras for me. After completing the Foie Gras (and soaking every last bit of it up off the plate) I struggled through my awful french to ask Justine (the host/owner/server/bartender) for a second plate of Foie Gras served after the main course. She seemed shocked, but I was so excited about the Foie Gras that I couldn't just have one plate. I have had Foie Gras many times and in many places, and this is the best I have had yet! The pumpkin soup was good, however personally when it comes to choosing between the two you should go with the Foie Gras! For the entree we selected two different things again. I chose the Poultry dish that had chicken, and my wife chose the Filet (steak) option. Both were fantastic, and were well executed when it comes to flavors. Nothing that was overpowering, and yet if you don't eat like your in the military (scarfing your food down), then you enjoy the development of so many subtle flavors over your palate. I was impressed with both my wife's and my dish. I would not hesitate to order both again. At this point I ate my second helping of Foie Gras, which was still just as amazing as the first round, and my wife enjoyed the fromage (cheese) selection. The cheeses were well selected, and portion was perfect for a single person. Last but certainly not least was the dessert. We enjoyed a pineapple/fruit dessert with vanilla ice cream, and a chocolate dessert with mascarpone. There were many other details that I am now forgetting, but if you are still reading you understand that its possible my mind had just been blown and I had forgotten the details. The desserts were amazing, and the perfect cap on a great dinner. Along with the beginning we opted to order the Ratafia de Champagne (which was sourced from a grower just 20 minutes driving to the south of Epernay), and it was incredible. We opted to not have champagne since we had a magnum waiting for us when we got back home (I know ... sometimes life is just hard!). By the end of the meal we got to converse with the chef and his wife who were the only ones working in the restaurant, and I can only imagine when it is busy they are working their tails off! Luckily Sunday is a slower evening to enjoy dinner, but with that said I would advise anyone to have a little bit of grace when reviewing this place understanding the amount of work, effort, and energy these two are putting into their restaurant. Bottom Line: These are two young people who have a passion to bring exquisite food, wine, and atmosphere together so that anyone willing to experience a meal at their restaurant will leave with a full belly, great memory, and changed outlook on what a meal can mean. I will never hesitate to recommend, come back, or sing the praises of this restaurant! I thank Maxime (the chef, and Justine (the server/bartender/host) for an experience I will not forget. There was a huge page of champagnes on the back page all set at a fixed price of 53 euros. Our server helped us to choose a brut which was light crispy and a perfect companion to our delicious French dinner. The turbot fish in champagne mushroom sauce looked divine judging by our next table but sadly they were out so I settled for the shrimp with Asian veggie medley. I've rarely had shrimp cooked to perfection as it was snappy light and tossed in a sweet chile sauce. Perfect with my champagne! Husband was a little more adventurous with the sweetbreads which came with a side of puréed potatoes. The generous sweetbread portion was cooked in a white wine butter reduction which was super rich. If you don't know what sweetbreads are and are curious, think of a non fishy version of monk fish ankimo liver both in consistency and flavor, so he says. Service was quick but very limited English. So we booked a cab and headed over so we could enjoy our first meal in France. And enjoy it we did! We opted to have a 2000 Vintage Champagne (which seemed quite inexpensive on the list) to drink. The Champagne was amazing, So amazing we decided to hunt down the winery and stop in on our trip. Since we have similar tastes, we both opted to get the foie gras starter and the sweetbreads with mushrooms main course. The foie gras was really good. Served with some very ripe melon and toast, it was a great start to our trip. The sweetbreads were phenomenal: Moist and succulent. The mushrooms and sauce along with it were also really fantastic. We finished up with cheese. A great selection of Morbier, Brie de Meaux and a goat's cheese. All in all, it was an enjoyable meal, and it was great they could fit us in last minute. We were also sitting next to a TV that was playing the inside of a fishtank on loop. So we got a whole lot of enjoyment from that as well.

The restaurant is an intimate and cozy place that bustles with the energy of its clientele and employees. The bar is a tiny galley one and right next to it is a small cooking space for two sous chef and the head chef. We marveled at their orchestration while we had a pre dinner cocktail at the bar, a delicious Lychee Kir Royale. We ordered the chef's menu (La Découverte) and also the foie gras. The foie gras came with a green apple salad, seasoned like a green papaya salad and was excellent. All the dishes on the découverte were copious. The Tom Kha soup was delicious and the Thai amuse bouches were very good. The shrimp salad with glass noodles was fresh and equally tasty. The knockout dish was the Lentil Larb. Both my friend and I thought it was out of this world and as she's Thai, we talked about recreating that. The fish served is traditionally steamed in banana leaves and served here in a ramekin. It was quite good. The Massaman curry and stir fried vegetables were just okay. They're catering to European palates and the curry was a little too sweet. The vegetables were bland. (Side note: the owner will bring you a small dish of her spicy personal blend of spices if you ask: do. They're wonderful if you like both heat and spice). The sticky rice crème brûlée with fresh sliced mango on the side is a must. The Wok flambéed seasonal fruits with ice cream of your choice (coconut for us) was underwhelming. The coconut ice cream was delicious but I think this would've been better with tropical fruit (defeats though the purpose of regional). Service was excellent and all dishes are made per order, so be ready to enjoy a relaxing meal. We both said we would absolutely eat here again.
