We were just driving by and I'm always looking for locally made jerky. Not the big chain stuff found in grocery stores. We liked the selection of things inside but wished there was more and loved the lady that helped us out even more. Hopefully we'll get some meat to process and will leave a follow-up review. There are not a whole lot of reviews for Archer's Custom Meat Cutting... We often acquire a whole lamb... The meat cutter we have used over the past few years has retired from that business... The ranch owner from whom we get the lamb recommended Archer's... We accepted that recommendation and had the lamb carcass sent there... Then I read the one short and two lengthy reviews about this business... Talk about take a deep breath and hope... One short review was five stars; the other two were just one... OUR EXPERIENCE WAS FIVE STARS... Gary Archer called to let us know the lamb carcass had arrived and to inquire how we wanted it cut... We went over how my wife and I have come to enjoy each and every part of the lamb... Gary told us how long it would take and how much it would cost... Both VERY acceptable numbers... Gary called on the date promised to let us know the lamb was ready... We picked it up the next day... To say the cutting, sealing and freezing jobs were excellent would be an understatement... We could not have been more pleased... Even the drying and vacuum sealing was done so well that there was no liquid "sweat" when the packages were thawed to eat... We could not be happier... Archers Butchers is Dishonest Bussiness...I got a Marinated Tri Tip that said 4Lb on the Package get it Home and the Tri Tip was about 2lbs...Weighing the,Meat with the Tri Tip in the Marinade Sealed in the,Package is Dishonest...Your not getting the Weight of the Tri Tip but getting Charged for it...Shame on you Guys...Go to Scalisce Butchers up the Road in Diamond Springs... read more

Save yourself from some serious attitude, who needs it? I had them out to slaughter a cow, apparently the man had an attitude about a person taking their cow half to their own walk in cool room to where he was only going to get paid to cut and process the other half, never mind that he was being paid to slaughter and cut it in half to hang and cool. He had the chance to tell me ahead of time that he wanted 40 cents a pound to hang it for three days, when asked how much it was to hang it for the full time that was 40 cents a pound as well. He asked if I had a problem and I said yeah I do. I said I'd have to see if the guy was okay with the extortion and he said he was out of there he wasn't going to do it. Called Castle meats and he said I wasn't the first person to have a problem with this guy. He wants to do things his way, I got the impression I was going to have a problem with asking for anything different at all. And by the way we were willing to pay a reasonable amount for handling the half, and I have a second cow to butcher as well, I just wanted to make sure I was okay with this guy before committing to another. In my experience other things tend to be unsatisfactory with people who have attitudes like this. read more
