He then told Enzo to take care of his "new" friends. We decided that an offer like that can't be missed so we went there for lunch the nest day. My friend decided to give Enzo our go-ahead to bring out whatever he thought would put a smile on our faces. As you can see from the photo I posted, Enzo was table-side a lot, asking about preferences and potential allergies. We were treated to course after course of great, locally-sourced dishes, every one would be a signature dish for eateries over here in the USA. For example, he sprinkled Parmesan cheese on our risotto (etherial!) and added "aged thirty six months" - and it was rich, creamy and memorable. This small place deserves your attention and a high rating from anyone who understands what it takes to run a memorable restaurant that delivers quality, fair-priced food. In Maranello, the debate is always - Cavallino or Montana - the two most famous restaurants in town. Each has their fans - especially given their Ferrari-centered reputation (Ferrari big-wigs have a private dining room in Cavallino, F1 drivers have memorabilia all over the walls in Montana). However, having eaten at these other excellent places, this place beats them for service, taste, and price. Go, eat, you'll thank me later!

Built on tradition and simplicity, but evolving over the past 90 years to include several "signatures," the current menu offers a retrospective including handmade Pastas, Wild Game and everything sourced from the nearby hills, vines and forests. Offering menus in English for the occasional tourist, though the vast majority of patrons hail from nearby, it is once the entrance is located that guests sit amidst warm confines listening to quiet chat and a bell dinging in the kitchen to announce each plate. Fit with a good cellar of Italian Wines at fair prices, a pair of Rieslings well-suited to fried cuts from the Pig's Head and Polenta matchsticks draped in Lardo, Amerigo's Tortellini en Brodo arrives piping hot with delicate Dumplings afloat in Broth as rich as it is clear. Not forgetting housemade Bread that needs no accompaniment, plus a tiny "Bread Cake" Amuse, no visit to Bologna should occur without sampling Bolognese as it ought to be eaten while Pumpkin Ravioli with Duck Ragu is equally delicious. Also offering Mallard as the day's local game, though Fallow Deer shot nearby proves more compelling, Desserts dial in on classics including Zuppa Inglese and Fior di Latte made to resemble Flan while the Egg Yolk Gelato "Like the Old Days" is indelible.

First of all, avoid the rabbit: the meat was mostly dry and there were a little shards of bone in the dish. Truffle lovers will prefer the gnocchi with black truffle, but be sure to order it with pignoletto wine to heighten the flavors. I enjoyed the little circular breads the size of a Silverdollar that came with our meal that were described to us as the brand of the town. It did help to soak up the rabbit juices.
