We did the chef's menu with the pairing. Nilgai tartare with avocado and toasty grilled bread. Corn ribs that made me emotional about a vegetable. Mesquite Gulf shrimp in a beurre blanc I wanted to drink. Texas quail on ruby slaw with wild boar bacon. Bison in a pasilla-pecan mole, tender as a love song. Horchata pudding to finish, with a little pecan crown. My side dish queen, claimed the sparkling rosé and guarded it like a hawk. I let her. Happy wife, happy pairing.
