I had to stop by the Kettle-Licious Kettle Corn food truck to take home a bag of their unique, fun and playful Caramel Apple Kettle Corn. It's a delight to all your senses. The fun bright green apple color immediately draws your attention to the bag. Opening the bag, the intoxicating aroma brings back childhood memories of visiting a carnival . The taste is like a party in your mouth, blending the perfect balance of creamy caramel and tart apple . It really does taste like a fresh caramel apple, yum! Overall, I think they should increase the portion (specifically the amount of meatballs you get), and obviously make sure they're cooked through fully before serving.

The food trailer in some of the pictures has been replaced by a building on the edge of Troyer's parking lot. You order at the window and most times there's going to be a line. It's a takeout business so you are on your own if you want to eat right away. The folks are friendly and efficient and orders are filled quickly once you get to the window. If you want to get a preview just search Auntie Ruth's on YouTube and enjoy. It's how I learned that there are a bunch of them in East Tennessee. Top 3 on my must-have's list today was a pulled pork bbq loaded potato from Baked & Loaded. Oh MY! They aren't playing around, this potato is huge. This perfectly cooked potato (love that they don't coat it in oil) was locked and fully loaded to the hilt with smoked tender pulled bbq pork, cheese, sour cream and topped with a slightly sweet & thick bbq sauce. The flavors all combined for the perfect comfort food. My craving for a bbq pork loaded potato has been fully satisfied! The couple running the truck were so kind and delightful to speak with. It was right across the street. 5 people were in line despite a chilly night. A Good sign. The menu was promising as well as the people running the show. A friendly welcoming atmosphere was the start of the Soul! The wait was 8 minutes with, like I said, a crowd in front of us. Friendly chatter ensued. The pork chop was coming out of the frier and I mentioned how amazing it looked. Tony threw in a 'too small to sell' freebee pork chop. 2 words... IT SLAAAAPED! Left no crumbs. Got some honey bbq wings. Mac and cheese. Green beans. Fried okra. All very delish! I only hope I take a trip back up to Soul Food Island. Thank you Tony and Tammy.
