Happened to stumble across Chef Albert and his sweets collection when I went to the Partake Collective. Chef Albert is sooo friendly and personable, which I love! He let me sample the vegan chocolate honeycomb and it was quite crisp and delicate. The texture literally felt like chewing on honeycombs wrapped in chocolate. Yum! I decided to bring home the cocoa butter crisps, which the chef states is made out of Ritz crackers and chocolate. Made me quite intrigued cause when you think of Ritz crackers, you don't automatically think of chocolate. But oh my gosh, I really like them! Perfect balance of chocolate and cracker with a great amount of richness coming from the Belgian chocolate. Loved the caramel flakes on top, as well. I am ECSTATIC over Albert's Petite Sweets! And so are the 110 guests we had yesterday for a major event at our house. Meeting Albert started off randomly enough... I have to thank Siri (!) for pulling up Albert's website when I asked for "chocolates near me." His was the second listing after See's Candies--! I needed a huge order of custom handmade chocolates as boxed party gifts, plus another big batch of handmade chocolates for table grazing. From the get-go, Albert was amazing to work with. This talented, cheerful, pleasant, creative and energetic chocolate wizard gave us multiple flavors and styles to choose from. Then we added a special request for custom handmade chocolate pyramids (The pyramid being our visual party theme). Albert took the challenge right away, acquiring special molds for the chocolates -- and sharing the chocolate-making journey in pictures with us. In the end we opted for a mix of chocolates and his incredibly mind-blowing pate de fruit (fruit paste) Sweets... OMG! The flavors. Every one of Albert's flavors bursts in the mouth, so many distinctive combinations including exotic fruits and playful retro throwbacks like passionfruit and speculoos. People descended on the table chocolates like locusts, they couldn't stop talking about how amazing everything was. And they loved the beautiful gift boxes that he made and filled. Albert is an exceptional craftsman and every single bonbon was a work of art, not only to look at but in the mouth. Speculoos, coconut caramel, Ube, calamansi and espresso are just a few of the flavors...fruit pates--wow. All agreed, Albert is the prince of chocolatiers and bonbonniers. After seeing Chef Albert Daniel at a few chocolate shows, I was finally able to check out his retail space (at the Partake Collective in Long Beach, CA). What a "treat" to see all of his delicious stuff on display and to get a few moments to chat with him. Albert is one of a kind in all the right ways, and he makes darn good sweets! He is constantly creating new items, and each one is AMAZING. You can't go wrong with anything you buy from his chocolate creations to his freeze-dried treats to his pate de fruits to whatever he adds next!! But, I have to say a few things about the Partake Collective in case you are able to visit there. It is VERY confusing when you first walk in ... is it a food place? a retail store? an office building? When I got to the top of the stairs, I was lucky enough to find the person managing the retail area. She called Albert to come over and help me. If she hadn't been there, I'm not sure what I would have done. This building has so much potential as a retail space for all the businesses inside of it, that is, if they can do a bit more to make it easier for the consumer. read more

Buying a chocolate box from Albert's was a delight! When I came to pick up my box Albert himself came to the delivery area, smiling and full of energy. He's found his calling card in life. With such passion how could his chocolates be anything less than world class? I found Albert's chocolates to be a little less sweet than usual. That's a good thing, he doesn't let the sugar overpower the other flavors. Texture also played a big role. The chocolate and caramel in the Cloud 9 was creamy and soft. The marshmallow was fluffy and delicate. The freshness shows. Add to that the gorgeous looks. Shiny chocolates, some with mirror glazes and artistic flares. I gave a box as a gift, and there immediate oooohs and aaaahs without one even being tasted. He also gave me a sample of his jelly square. Normally jelly candy isn't something I get excited about, but these are bursting with flavor, and again, are cooked perfectly so that they have a nice soft and light feel. I met pastry chef Albert while I was helping another chef assembling lasagna for the fire fighters fighting the fires. Anyway he makes the most amazing "mini" candies and dried fruits. So delicious! Get the pâte de fruits! My favorite is the passionfruit. They're vegan and gluten free. They have a perfect crunch from the sugar dusting and the inside stays amazingly tender for the perfect juxtaposition of crunchy and chewy. If you live gummy candies- this is the Cadillac of gummies. I texted him in the morning, with a same-day delivery request, for a very special person to me, that lives close to his Cooperative in downtown Long Beach.
