    This place is great! It was our first time here and it will be a place we will frequent. It's a fun atmosphere with cool decor. They serve a small cup of homemade warm soup as you sit down. It is soooo good! The menu is large with many choices for different tastes. There are tacos, seafood dishes, burritos , array of appetizers and a bar that will serve anything you might want. The margaritas are delicious!! They have margarita flights to have the chance to taste all flavors. They also have salsa flights with chips. We ordered a couple shrimp dishes , the jalapeño poppers and several margaritas. The food was delicious. Full of flavor and served hot. The service was also great. They explained the menu well, offered recommendations and were very friendly. Go check them out.... You won't be disappointed.

    I loved the salsa sampler! We got abuela, verde, and mango habanero. Each flavor was delicious and so flavorful. There are three guac options all made table side. I love the guac experience it was so much fun. The inside of the restaurant was beautiful. I love the vibe and the colors.

    Our server did not speak any English (could not answer any questions about the menu or food items, could only say "ok" and "thank you"), and the level of cleanliness in the restaurant was appalling. I actually didn't feel safe eating there. On top of that, I have an allergy, and didn't think the server could understand or care for the allergy, and did not trust any surface of the kitchen to be kept organized or clean considering we were seated next to the bar which was piled with employee belonging, open Amazon boxes, sweaters, etc. The menu was worn and faded and sticky. I didn't even feel comfortable drinking the water. I would've left right away but my friend had ordered a beer (came with a lid thank goodness) so I had to wait for them to finish before we could leave. The owner stepped in to vaguely answer a question (I asked if they had any hard cider, which my server said "chicken?") and was dressed so casual I asked if he even worked there. I would never eat here or recommend. No idea how this place is even open. ZERO STARS.

    We were the only ones in the restaurant at noon on a Sunday. We were seated right next to a bussing station and two people folding napkins around silverware. They were about 3 feet away. It seemed like our seats were more about their convenience than our comfort as they were stacking plates behind us and it was loud. We found a ring on the floor and tried to give it to our server. She said it wasn't hers, but we again commented it was on the floor by our table and it wasn't ours. When the food arrived about 3 minutes after ordering it, it looked beautiful, but it was not flavorful and the beans were cold. The last time we ordered the same thing and it was so good, we talked about it for weeks. This time didn't come close. For no drinks and bland food, the cost is far too high for us to be repeat customers.

    This was our second time coming, and just like the last time, food was good and service is slloooowww. I ordered the taco bar flight which came with 3 margaritas and 3 tacos and it was good. My husband ordered fajitas and those were also good. We ordered the tres leches to go and it was absolutely horrible! In no way was it a tres leches. It was soooo dry and neither of us liked how it tasted. That was a waste of money. Overall the food is good but service needs improvement

    First time here with my wife, and it was great. We will absolutely be back. We order 2 beers, salsa flight, and 2 tacos each. Both of us really enjoyed the elevated style of Mexican food and it certainly adds a much needed Mexican flavor profile to Fort Collins. I would put Agave Underground in the category of Authentic / Elevated / Sit-down Mexican food, as opposed to street/taqueria/market. Ambiance was good, the place felt clean, service was great.

    New restaurant review Who: Agave Underground Where: located across the street from the movie theatres at Foothills Mall About them: This is a high-end take on traditional Jalisco Mexico food recipes. The Feed.. Appetizer: Salsa Tasting, Abuela - tradition tomato salsa Mango Habanero - Mango, roasted hot peppers Avocado Mousse - Jalapeños, Cilantro, avocado, avocado oil Mole De Origen - too many ingredients to list but I highly recommend ordering a side of this with your chips just to try it... thank me later All above were served with blue chip tortillas Main items ordered: Grilled Burrito - I chose the asada. Salsa fresca, charro beans, mexican crema smothered in green chile Bacalar Scallops - seared scallops with jicima slices, bacalar sauce, fresh mango Salsa, fired green onion, fine herbs, Macha oil Tacos de carreta - Jr Sinaloense - carne asada De Panza - slowly cooked pork belly Al Pastor - guajillo marinated pork Ensenada - Beer battered fish Pollo A Las Brasas - Octopus marinated in oil then grilled Zara - Grilled red snapper Arrachera - carne asada steak served with a fresh Cilantro chimichurri and rotillas Postres - Prickly Pear Cactus cheesecake. Just incredible.. Drinks : Tequilas... the Mango shotta which is a mix of Mango and jalapeno.. WOW! The experience: Ok... we have actually tried more items on the menu than this but I did not want to write a 16 chapter book. THE FOOD HERE IS NEXT LEVEL AMAZING. We walked in 2 days after their soft open and have been back 6 times since. They do not officially open until sometime in November as they work out the "kinks" All I can say is that the way they have built their flavor profiles is exactly what you would expect from a Higher end establishment. They did this while preserving the traditions of their ancestors in Jalisco while adding new life to very common dishes... nothing common about this place. The salsas are amazing, the proteins are amazing. I spoke with the chef who told me point blank.. "if it's not perfect it does not leave the kitchen". That is a very hi bar to set for excellence. The staff is new and friendly. The biggest issue we have seen is they are still not eyes up in the front of house and there were a couple of times where we had to wait for a considerable amount of time at the bar for someone to help us when it was not busy. As we have communicated this to ownership this has improved. This place is going to crush it and if you are a fan of Buena Vida or Blue Agave then this place should impress you. Happy eating!

    Absolutely incredible food and atmosphere. Very nice staff. Lots of well-spaced seating. Would highly recommend.

Make sure to ask for Burger Sauce instead of the usual ketchup and mustard. This is a craveable burger. I love the decor and vibe of this place, with some cool but eclectic memorabilia and license plates from all the states. The dining room is a good size with big and small group seating options. Service is friendly and attentive. It is a sit-yourself situation. The tables and seats are clean (not sticky) and the bathrooms are also nicely clean and well-kept. This place has a lot going for it. I learned that they are having a grand reopening on Sunday June 14, 2026 with an all day happy hour and debuting some new made-from-scratch menu items!
