We came into the bar area to sit down and cool off from the heat. There was only one other couple seated in the main dining area besides us, and since it was around 2:00 p.m. on a Wednesday, the restaurant was not busy. We ordered drinks, an appetizer, and a bowl of green chile stew. My husband received his stew, but my appetizer--chips, salsa, guacamole, and queso--never arrived. Our waitress seemed overwhelmed, so I politely reminded her that we were still waiting for it. She rushed to the kitchen and assured us it would be right out. About 10 minutes later, another server finally brought the appetizer and apologized, saying, "I'm sorry, I forgot to bring this out." Unfortunately, the food was not worth the wait. The salsa tasted like it came straight from a can, the guacamole did not taste fresh, and the queso tasted like old refrigerated cheese that had been partially melted and served. It was honestly quite disappointing. Between the poor service and the low-quality food, the experience was not worth the price. It was especially disappointing because this was our first visit to Taos, and we had hoped for a much better dining experience. read more

The Adobe is the bar at the Taos Inn. We visited here last year and wanted to come again. Bartender was great and easy to talk with. We both had very good hand-crafted margaritas. Also, a half order of nachos which were large and very good. Seating at the actual bar is limited to about 5 stools, but several tables in the bar area. I've reviewed a year or so ago what's basically the same place under the Historic Taos Inn. I'm not sure why they have a separate yelp page but also the Adobe Bar section is separate off from the rest of the Inn (yet still connected) so that may be the reason. I'm unsure if the food menu is the exact same; that leaves some mystery to be determined in the future. But anyway, we were basically stranded with nowhere to eat and nothing to eat when we first got into town and my boyfriend's father thankfully offered to drive us into downtown for some grub. They have great beers on tap and in can. I think I had a seasonal cider and a good ole favorite stand by when I'm in town - the Santa Fe nut brown. I ordered the enchilada platter with chicken in red chile sauce. It comes with beans and spanish rice and is covered in cheese in blue corn tortillas. There was something about it. I'm not sure what but I wasn't digging my meal as much as the first time I came last year and I think I had a brisket burrito of sorts then. The food was kind of mediocre but not terrible and my boyfriend that ordered the same thing agreed. The music was a little loud but that's because it was an open mic and really depends on the performer. The place is really cool and always packed. Wonderful atmosphere, good service, quality food at a reasonable price. Taos Inn is right off the plaza, but right on the street. Parking is in back. The night we were there, the bar had live entertainment. The bar blends into the restaurant so we could hear the music. Southwest style menu. I have been here several times over the years, and found the food to be consistently good. read more

The bar tender working Saturday May 16th was extremely rude. As soon as myself and another patron walked to the bar to look for seating because there were no tables available he immediately told us I can't serve you! Threw up his hands and said to go find a table and sit down. There were two empty bar stools in front of us and I asked if they were taken and again he said I don't have time to serve you. I proceeded to tell him he doesn't have to be rude then he starting arguing with me that he wasn't being rude. So instead of The Adobe Bar getting my business I walked out and doubt I'll be back. Recommendation if your employees can't handle being busy you should find new ones that can. read more

This review is only for the bar. It is really a great space; perfect for hanging out and talking. Drinks were fine. Service was indifferent. The music was pretty good. The space makes up for the shortfalls. Actually would make me consider staying at the hotel! read more

Another establishment where no one seems like they want to be there. They've been voted best margarita in town but if that's true then the margarita is a lost art in Taos. Really cool vibe inside but there's a lack of service and sub par drinks. read more

It's a very small little bar tucked in the lobby of the Historic Taos Inn. The bar itself is only 8-10 seats but it opens up into the lobby where there is ample seating and live music every night. There's also a fireplace and the old city well in the center that has been converted into a fountain. Very nice spot within the hotel to enjoy a drink and relax. read more

Food was ok. The first evening we ordered nachos as did the table next to us. They switched our orders (chicken vs beef). The second evening we watched 3 tables of people get up and leave after they got tired of being ignored. This all happened over a 15 minute period while we waited for nothing more than a glass of wine. The wait staff can't seem to multitask and the bar manager was no help. They seemed highly frazzled and verbally shared their stress with the customers. We've stayed here a few times but this was the worst experience ever. Sad since it has had a good reputation in the past. May be our last time at this historic place. read more

A buddy had told me that I needed to go to the Adobe Bar. Unfortunately, I forgot his advice, but after a four week, stay in Taos and visiting every music venue within 20 miles , boy was he right. Our wives were shopping for jewelry and my friend and I just couldn't spend 20-30 minutes in a store looking so we decided to go to the closest bar we could find for a drink. We each had a margarita and were enjoying the time not looking a jewelry and this place was very comfortable and enjoyable. We told the ladies where we were and sometime later they stopped in to say hi and wanted a bite to eat, so the four of us enjoyed a little food, the guys our drinks and the ladies non-alcoholic liquid. WE had walked by here a few times during our vacation stay and kept saying we wanted to stop in (Doc Martin's sign) and are very glad we did as a good time was had by all. read more

I loved this spot so much that I visited it twice while staying in Taos! Cool architecture, tasty cocktails, local beers, really friendly bartenders, great live music and good food. If I visit Taos again I may stay at the Historic Taos Inn just to be close to the Adobe Bar. Though do know that you should arrive early if you plan to listen to live music on a Friday night ... I scored a seat before the music started, however, so many potential guests walked in and out because there was no seating after the music started. read more

It seems like every Taos visit merits a trip to Adobe Bar (at the Taos Inn). I love the location and the people watching. We have never had great service here, in fact one time we walked out of Doc Martins (the adjacent restaurant). This time, however, the bartender came out to assist the waitress and was friendly, helpful and hilarious. But I do like to sit and rest awhile, especially with the fall weather we were enjoying on our trip. We dined and drank here twice during our recent stay. Both times the service, food and drink were very good. Our party especially liked the Chili Rellenos and the margaritas. Also the Vida mescal- wow! Our least favorites were the rock shrimp appetizer and the nachos. I must admit I did not inquire about the shrimp before ordering. They are tiny (pieces?) breaded and fried and dusted and drizzled. They are tasty, but I was imagining boiled shrimp, peeled and dusted with ground pepper. And the nachos are a large bowl of chips with some of the other ingredients, but not nearly enough of the other ingredients to support all those chips. All that said, everything else we had was outstanding. I also cannot say enough about the great service in the bar. These folks are great! read more

My partner and I stayed at the historic inn and decided to get a drink here one night. I'll start with the positive, the service was absolutely fantastic. Everyone was nice, helpful and seemed knowledgeable about what they could offer. My main gripe was the price point the drinks are sold at. Our drinks weren't bad necessarily. The base liquor is quality stuff but they were very unbalanced and in opposite directions. My drink was sickeningly sweet and could have benefited from another 1/2-3/4 oz of lime while my partners was the exact opposite and mouth puckeringly sour. I think they're really close to having it down here, but if they want to use this price point then they need to improve a bit. read more

Loved this place! On our last night in Taos (sniff), my fiancé and I stopped in for a margarita. The entire hotel (Historic Taos Inn) was HOPPING, yet they were conscious of distancing because of COVID. We got seated at the bar and got some delicious margaritas. Then, we decided to stay for dinner. Good call! The hotel restaurant "Doc Martin's" is awesome. We got shrimp ceviche to start. Pretentiously called "Taos's Living Room," I hesitated imbibing here due to that touristy label. However, on a chilly November evening, after the drive from Durango, I needed a cocktail like the U.S. government needs an overhaul. The bar itself was smaller than expected, but tables take up the entire first floor of the Taos Inn where the Adobe Bar is located. Only one stool was empty at the bar, and I graciously allowed Donna to sit, while I stood, fervently catching the bartender's eye. Soon after our wine and double cocktail were served, conversation flowed back and forth between all the patrons and staff at the bar. It didn't matter if you were a tourist or townie, everyone was cool and accepted. After a couple of hours, entertainment began, visible from almost everywhere on the first floor, and the placed was packed to the rafters. Packed on a Monday night in November! Holy crap! Taos has less than 5000 people! This was the first week of November, the quiet time in Taos! We stayed for about three hours, until we needed something to eat. The Adobe Bar is close to perfect! Same review for Doc Martins as they're pretty much the same place - don't let the stars fool you, this place is definitely 5 stars. The food is amazing, the drinks are on point, and the staff is super friendly. If you're not into live (good) music, just sit over in Doc Martins where it's quiet. My wife and I make this a priority stop every time we're in Taos and we plan on continuing that tradition! read more

We ordered a beer just to top our drinks off and try to salvage them and still left with half empty drinks. Please revisit your recipe, my guys.
