We stopped by Monday during lunch and there were plenty of tables open. Our server quickly gave us the menus and iced water. The menu has a variety of ramen, rice bowls and appetizers to choose from. It was nice to have the option to order which noodle type like thin, normal, udon or even spinach noodles! We decided on the black garlic and tang tang ramens with the normal noodle type. Both bowls were delicious and generous portions of meat. The pork belly was tender and thick slices, which stood out from standard ramen places. It would be nice to have a red/spicy version of the black garlic ramen as I had to add some chili oil to bring it all together. For the tang tang, this was my favorite out of the two in terms of flavor! As for the restaurant itself, it was clean all around, music was playing in the background bringing back nostalgic kpop vibes, and reminded me of a pocha with posters and fun decor all around. I love this place, I have consistently gone for the last few years even prior to their remodeling. Such a neat and quiet place to go to when you're hungry. Huge portions of HANDMADE noodles, I love it when restaurants put care and effort into their ingredients. Came here with the family to try the ramen since this is one of the ramen places in Elk Grove that we haven't gone to. Unfortunately, it was just not for us. We ordered the black garlic ramen, tang tang ramen and the beef don. Oddly they have different noodle type but the server didn't ask what noodle type we wanted. So it's a good thing I told the server I wanted thin noodles else they would default to normal. The black garlic ramen was really bland and tasted like unseasoned pork water. The chasu and noodle was decent in texture but that's about it. The tang tang was the same as well, bland and not spicy. For this we ordered with no green onion but it came with it still. The server noticed it when they brought the ramen over and asked us if it was okay, then kinda just went back and scooped it out right behind the bar, not even in the kitchen lol. Interesting Japanese/Chinese hybrid ramen shop right off of Hwy 99. The Black Garlic Ramen doesn't have the typical creamy consistency of classic tonkotsu broth, but it offers the same boldness in flavor. The bamboo shoots and black fungus were such a nice touch! It reminds me of ingredients my mom puts in her own noodle soups. Lastly, the noodles had a nice soft texture to them. Bonus points for the peaceful ambiance, clean interior, and medium-volume indie music. It saddened me to only see 2 other tables occupied on a Saturday night. The broth, noodles, and toppings were all excellent. Just as a note, the broth was quite heavy in fat-content. Overall, good service. For a relatively low amount of tables, the waitress took an incredibly long time to check-in and to deliver the check. Prior to its renovations last year, this was my favorite lunch spot. The food was tasteful, excellent quality, and the staff were very friendly. A month ago, I came for lunch and noticed the quality drop in the ramen. It was salty and the chasu was pretty firm, but I thought nothing of it. Flash forward to yesterday, my partner and I came in. The first thing I noticed was the AI flyer for a cold noodle special. If ANY establishment uses AI images to promote a product or service, that's an immediate red flag for me. We should've left but ordered anyways, because how bad could it be? We got the stir fry udon pork noodles and a bowl of tonkotsu ramen. The ramen was bland. The udon however, was pretty oily and the fish sauce or something in it had a rancid after taste. But our favorite which is the Black Pepper was just like water and no richness to the broth as before. Was such a bummer. I would not recommend at all. - overall, I did not care for the food and don't think I'll be back. SERVICE: meh. The lady was very quiet and a bit hesitant.. like she was standing there and could see we were done eating but I still had to ask for the check. To start off, the food here after the reopening has been amazing, I haven't gone here before the reopening so I can't say what it was. But from the broth to the noodles, this was one of the most delicious ones that reminds me of Japan. For the ramen, you get to slightly customize your noodles (thin ramen, normal ramen, udon) and broth (normal, half-half, one and half). My husband haven't stop talking about trying 8 Hours Ramen. It's not a big place but we came early enough that there are still tables. It looks like a family run, mom and pop shop. I'm baffled by the options for soup base flavor level. How do you determine half, normal and one & a half? Nothing memorable except that it was $18 each bowl. To be fair, I've had really really good ramen in my lifetime living in NYC previously and traveling around the world. This place is very cute and cozy. It's a bit small so you may wait a bit before being seated during dinner. The spicy miso was very flavorful and I enjoyed the broth throughout the whole meal. I think the flavor of the ramen is okay, but tastes rather artificial. The broth is not the typical flavors you would get from ramen. It tasted more like Chinese style noodle soup.
