The food was delicious - we each got a steak, ribeye and tenderloin and the miso carrots and fries for sides. The carrots stole the show for the sides, beautifully caramelized and flavorful. The steaks were on point, the crust on the tenderloin was incredible and the quality of the meat was great. It's worth taking the time to locate the shop. The building looks like new, and is pristine inside. The entry, market, everything, were all completely clean, spotless really. They are currently only open on Fridays. Check the hours before going. The meat (mostly beef when I visited the shop today) all looked great, but I haven't purchased any yet. There were interesting cuts, some fresh frozen and some fresh. I really want to go again - with someone who knows more about beef than I do - the next time it's open. I definitely want to try the beef chorizo. I did get some produce, jalapeño chiles and heirloom tomatoes, both greenhouse-grown on the farm. They also had fresh oyster mushrooms and a couple of other types of chiles.

I believe I called in on a Friday for a pick-up the following Monday. As usual, there was a line, but it goes fairly quickly. I get up to the counter, give them my name for the reserved roast and add some green chile twice baked potatoes to the order. I walk over to the register, tell the cashier my name and what I'm buying; I pay and I'm outta there. Easy peasy. If you don't have a trusty butcher and don't want to buy from the regular grocery store, Dickman's is well worth it.

I stopped in and asked the lady behind the counter if they had Krakow. She said yes and pointed to a sausage in the case. I said no, that was not it as it was much smaller around than what I grew up eating, which (in the midwest) is around 6" across. The lady said they've been making Krakow for 40 years, and "that's the way people like it here", and that's that. I asked her if i could show her a picture of what I was talking about. She said it wouldn't do any good (to show a picture). She pretty much ignored me and went on to other tasks. I asked for a taste and she sliced off a piece. It's about 80% taste-wise of what I grew up eating, not nearly garlicky enough but close enough to buy a pound. As she was slicing it, she said "he" makes it once a year right after Thanksgiving and when it's gone, it's gone. So I asked for 2# and said I was going to freeze some. She said it would dry out when frozen so I only got 1#. Perhaps she was really busy, but she didn't seem to have time for me. She was pleasant enough with my requests but not very friendly.
