I almost didn't review this restaurant because they already have 5 stars, but I have to put in my two cents. Fabulous burger and steak fries. Husband had brisket sandwich and agrees his was also fabulous Tiny, but good turnover. Napkins are IRONED!!! Nice touch for me. Decor is fun, and available for purchase. Such a good idea to pull off Route 70 for this gem. Good whiskey & scotch selection, and it looks like a place fir a band in the loft. read more

I grew up in Georgetown and I keep very close eye on new businesses because they've been lacking restaurants in recent years. I was SO EXCITED to see a bourbon bar rather than another brewery (no offense to beer, I just don't drink you) and man, this did not disappoint! I was pleasantly surprised to see the well Whiskey is Buffalo Trace and a 12-year-old Pappy is on the top of their bourbon list. The Manhattan was smooth and delicious. The interior has been lovingly restored by someone who truly loves this building. That's the heart of what Georgetown is, people who love the community and want their businesses to enrich it. I ordered the salmon appetizer, the toast was buttery and not over-toasted, the salmon was melt in your mouth and the chive cream cheese was the perfect compliment. The owner is kind, loves the community and the building and sat answering all this local girl's questions. I felt very welcome and will be back as soon as possible! read more

A VERY happy find while up in Georgetown for the Holiday Festival. Ron was even surprised to get us seated in 5 min after a day of 1 hr waits but it still would've been worth it to wait longer. A beautifully restored building with a miner saloon-Americana feel that belies first-rate chefs (Travis Smith!) and a bourbon selection that runs from accessible all the way up to Pappy's. I loved my house-smoked brisket - perfect smoke without overbearing spices - and a little serving each of slaw, potato salad and beans, so I didn't have to choose. My dining partner loved the butternut squash ravioli with just the right amount of Gorgonzola cream. 511 Rose mules made with Breck Bourbon goes with the ambience. We had a wonderful lunch today!! The staff and food was out of this world. My friend and I both had the prize winning fire roasted tomato soup and the beet salad which was wonderful. Next time in Colorado, we will stop for dinner!! First: this place and the story behind it is truly amazing. I was going to leave a 4 star review because I wasn't happy with the Mac and cheese but this place is so awesome it needs 5 stars. I bet if I ordered another dish I wouldn't even think to leave 4 stars. The Mac and cheese said it comes with goat cheese and Gorgonzola crumbles but it came with the goat cheese and then blue cheese crumbles, and I don't like blue cheese. The Mac was not on par with the quality of everything else. My Rocky Mountain root beer was great. The whole place is so unique and has a great environment, great service, and a beautiful view of the mountains. I really loved the ambiance and the old vintage wall décor. My brother got the cheeseburger with fries and he was so pleased. It looked so delicious. I would say everything here is a great experience, the story behind this place is amazing, the waitress was so friendly and attentive, I just wouldn't recommend the Mac and cheese personally! read more

We were in Breckenridge recently for a family vacation and wanted to meet some friends from the Denver area at a 1/2 way point...we chose Georgetown. Originally my daughter and her friend chose another restaurant to go to, but upon arrival found out they were closed! So we had to scramble to find another place for 5 people...we walked around Georgetown...not really that big...and stumbled on 511 Rose, which is also the address. Menu looked yummy and drinks amazing. We had some live music performing by some local artists with a cool small stage above the bar area. The owner and his daughter did a fabulous job of making us feel welcome and gave us a little history on his purchase of the building. As a real estate broker and investor...I always love hearing the background of a building and business. I had the Co Roasted lamb and I cannot remember what everyone else had...but the Rose street mules were great and I heard the mac and cheese was to die for! I would definitely make a bee line again to 511 Rose! read more

Everything is great about this place except...the food. Service was excellent, the staff handled the lunch rush very well, and ambiance is great. Stopped in for lunch after hiking. Our group ordered the cheeseburger (bistro burger), brisket sandwich and smoked chicken sandwich. The chicken was incredibly dry, brisket was tough and hard to chew. Cheeseburger was just OK. Sides were pretty good including the beans, fries, and potato salad. However prices are a bit steep for what you get. We would have ordered drinks but they were too pricey considering having only one beer: Coors Banquet. Maybe they were having a bad day but I think we'll walk right by next time. read more

Absolutely amazing! Our family of four went in on a Thursday night after skiing and sat right down. Everyone found something they liked, and the service was quick friendly and personable. The food was delicious and presentation was great. With desert the bill came to just over 100, but well worth it. Will definitely be back. read more

Everything about 511 Rose was exceptional. The service, food, and decor (especially if you know that the owner built the restaurant). Over a dinner and lunch, we had the beet salad, fire roasted tomato soup, green chili, Philly cheesesteak, and salmon sliders. All were outstanding. If I wanted to be critical, the beets could have been diced larger since they got lost in the salad. And the food was reasonably priced by today's standards. read more

Ron and Sierra are a dynamic duo of service, smiles and delicious food in a great atmosphere. Kids had grilled cheese and loved it. The chili con carne is fantastic and served with a tortilla.
