So, the minimal decorations and decor are probably because the restaurant is so new. I'm sure the owners will make the place look a little nicer once they are able sustain and stay in business. Instead of putting other restaurants down, he gave each one credit where it was due. That level of confidence and respect says a lot about both the owner and the business.
