And the menu is only a small selection - choose a ramen base, toppings, thickness of noodles. I chose the black squid version, with thick noodles. The broth overall is very strong and thick. Even the ground meat was covered in squid ink! This was a really good ramen, even if I did feel kinda thirsty afterwards. The noodles were Chinese rather than the Japanese ramen, which was ok, but it would really be better if they had the latter! The pork belly was so fat and thinly cut though, oh my gosh. You could add pickled radishes and veggies from little jars on your table (one was spicy and the other was very salty)-- both were delicious. You share that as well as any more spicy seasoning and communal water. My bf got the Red King and it wasn't as spicy as he thought it would be, and it is more chili oil than actual chili powder. His soup was salty as well. I quite like this place for its novelty ramen. If you know what you like, you can also customize your ramen!

I ordered a Noritama-Uma, and I was thoroughly impressed with what they gave me. They had a rich and flavourful broth and a very tender and juicy piece of pork, which is something I can't necessarily say about other ramen places that I've been to. Their noodles however were a tad soft considering how I asked for them to be extra firm, but otherwise it was very good overall. The soft boiled egg was fantastic, and still had a slightly runny yolk. The gyoza was very fragrant. The filling was tender, with just a tiny portion of the skin having a light crisp texture. The chicken karaage was also very good- the chicken was still succulent, but it still managed to have a light crispy outer layer. I'd rate my experience here positively. It's a little pricier than the places that I'm used to having ramen at, but they've got the food quality to match the higher price tag. This place is definitely worth another visit.

I really wanted to try their limited edition sake kasu ( only makes 5 bowls a day) but I was craving for seafood. Paid $155 for it which compared to other places it is a bit expensive but can't complain. Service was quick because I guess we were the only ones there. Place is small and we came late as they there half an hour until closing which is at 12am.

It's not their most recommended ramen, but it's still pretty delicious, especially their Pork. It just so soft. Mm... What I like most about this shop is that they're not joking around with their spicy level. For the noodle that I ordered it comes with their "Jigoku sauce" meaning "Hell sauce", it ranges from 0.5 to 3. Most people should be able to handle 0.5 spicy. Level 1 spicy kicks it up a notch where you kind of can handle it, but you'd need to drink more water. If you got level 3 spicy, you'd probably have a stomach ache from it's spicy content. I'm probably overreacting, but you could try it out yourself.

No booze here - walk one block if you haven't had enough of that. They do make a fantastic HK milk tea, though. A thick Malaysian Curry is full of chunky beef, and I love the soft tendon. A casserole of fried pork chop with tomato sauce and cheese is like chicken parm for Asians. And the Asians did it better. The Hainan Chicken is great, though they don't make the garlic rice. Now for the best food in Hong Kong: Bread with condensed milk and butter. It tastes like it sounds, and it sounds pretty whatever, but it's indescribably delicious. Less $50 USD to feed three hungry people, and the food comes out instantly. There's less than ten minutes between ordering and arrival, and each dish is awesome. If I'd known the HK diner food was this good, I could have skipped all the Michelins.

The pork is succulent and the noodles - well the noodles are cooked to perfection. I like them "middle" al-dente. You can also choose from "thin" or "thick". I go thick (like you should). As a bonus, have a bit of cheese. They melt and someone burn the cheese once on the noodles that give it an extra delicious smoky taste. Eat ramen now. Yum. Burp.
