Located in busy Lai Chi Kok just a block or two from the touristy Ladies Market is this Michelin 2025 acclaimed PFB joint right on Fa Yuen Street a block or two down from Nathan Road. They have shops in other locations in HK and Kowloon too. Step up off the busy sidewalk and peruse the menu before ordering at the counter inside. Lots of different choices but I chose the standard "signature " PFBs. Within a couple of minutes, you'll have your order. Pro Tip: Your order is pulled straight from the pan - SUPER HOT, so I'd wait 1-3 minutes before initiating consumption! For me, PFBs are a multi layered treat, so let's review the PFBs here from the top down: Top- surprisingly delicate and easy to bite off before you can suck in the tasty soup pork broth inside. Filling: Lots of flavorful rich pork - super tender, a smidge umami and meaty. Bottom Crust - perfectly crisp moderate brown on the bottom for a perfect delicate crunch, and a nice subtly chewy interior just above. Overall Perfect in my book. Not greasy like some other places. Set your expectations to moderate and you'll do just fine here! Verdict: Highly Recommend!!! The PFBs here are absolutely superb.

However, they are made in large batches at a time and the quality of the dumpling can vary depending on how fresh it is. If you have to wait for a new batch to be made, rejoice because your dumpling will be amazing and extremely juicy. If your dumpling comes immediately after you order and looks slightly collapsed then it may not be as crispy and will not have as much soup in it. Either will require patience and caution to eat because the juice will always be very hot.

I had the beef dumplings, beef pancake, and cumin chicken wings. They came out freshly prepared and hot; so hot that I had to wait, lest I burn my mouth. So worth the wait. Just really good. Tasty on their own, but the dumplings come with two sauces. Most of the places around here are on the small side, so it's best to go during off-times, or get takeout, or be prepared to wait. FYI, there's a nominal charge (HK$2) for a reusable takeout container. There's a restroom at the back.

You might even hear me say it's THE place for beef brisket noodles. Other (likely amateur) things tourists like me say: My favorites are the broth, flat noodles and on occasion, tendon. I think most people would go for the broth or curry. E-Fu noodles seem to be the most popular, often being sold out. Once they even sold out of broth. I'm lucky or an unpunctual eater or very late to the Kau Kee club as I've never waited in a line. Know that long queues have been said to be the welcome. The first time I visited was thanks to its Michelin recommended status. At the time of writing this review it has since been awarded the Bib Gourmand. The experience was quintessentially Asia. The two of us sardined on a table with a family of four who were either local or no stranger to the land and culture. Normally patrons respectfully dine quickly in silence and leave. This group was indeed quick with typical stoic expressions but also gifted us a smidge of their efforts when looking up from their bowls for the slightest seconds, pointing at their drinks: cokes with lemons, wordlessly suggesting we try some and gesturing their hands to show us how to. Lemon first on the ice, coke poured on. Of course we copied and it was the most extravagant part of our meal. ;)
