I didn't realize ribs were such a big deal in Belgium, so I was genuinely excited when I ordered them... only to feel deep disappointment when the server returned to let me know they had just sold out. Luckily, I pivoted to the vol-au-vent and had absolutely no regrets. The chicken was moist and creamy, and the pastry was incredibly flaky and light.
Naturally, I paired it with a Trappist ale, which felt mandatory. Cozy, satisfying, and quintessentially Belgian--this spot lived up to the recommendation and then some.
