Conching's is famous for one thing: their charcoal-grilled native chicken. What is a native chicken? They are more commonly raised in rural areas, cage-free. They are smaller in size than the regular chicken, it's because of their organic diet. Both its size and diet make these native chicken unique and more natural in taste. We ordered two servings and it didn't disappoint. So delicious, salted just right and the skin is crunchy. Setting looks rundown, nothing fancy with long tables and plastic chairs and a grill out front. Very laid back. Live music entertained the diners... young adults with music instruments. I was amused. Anyway the native chicken cooked on these little grills but the chicken themselves are tiny - you probably need about one chicken a person. They have a lot of other grilled and friend foods including various fish - milkfish was the only one I recognized. We also tried the ceviche (local name I don't remember) but extremely good!! You order a bunch of different meats, you get hanging rice, soy sauce/vinegar/spices, and enjoy for a reasonable price! Don't expect anything fancy, it's literally just some good ol fashioned home style bbq with classic vinegar and soy sauce. Everything was delicious but the chicken was probably my favorite. So tender! Don't forget the puso, or hanging rice either! Add on a mango shake, you won't regret it. We had almost a dozen different mango shakes during our stay in the Philippines and this one was easily in my top 3 favorites.
