Why? I'm a chef. Mostly a home cook these days, but occasionally I still do something in the professional arena. But my knives are my tools of the trade - an extension of my hands, if you will. They need to be sharp. You cannot do a good job in the kitchen without the proper tools and you have to take care of those tools. My previous bladesmith decided to stop returning my calls - his loss. And I really needed to find someone new. I wasn't sure how I was going to do this until I was at an Elite event the other day and it turns out the musician happened to be a bladesmith by day. Lucky me! Danny and I spoke for a bit and by Monday, he was at my house taking care of my knives for me. So here is the deal - he is mobile - 100%. He comes to you, so you are not without your knives. He sets up shop in his truck - and sharpens your knives while you go about your day. What's better than that? Sure, you can take your knives to the local kitchen store and be without them for a week, but why? Danny comes to your house. The beauty is that there is not a set up fee, or a "call" fee. He charges you per inch - so how ever many knives you have and however long they may be - that's what you pay. And that is how it really should be. And at the end of the day (okay 3 hours for 15 knives and 5 pairs of scissors) - my tools were returned to me super sharp and beautifully polished. It was like I had all new knives for the price of buying a knew fancy knife. I'll take it! Dull knives are dangerous - for many reasons. So in a year - I'll call Danny again.

My fiancee and I thoroughly enjoyed the album, and he was able to fix a pretty severe chip on a Shun Blue Kiritsuke knife - as well as reshaping the profile of the blade to my liking, also was able to fix a bent tojiro pairing knife, and bring back some life to a few German blades I had pretty much stopped using. All for a very affordable price, and in a timely manner. Will definitely be a return customer! Read another review about knives being less sharp after the service - a machine polished edge is still going to take a little love to get it where you want it, Take the time to use a leather strop or even newspaper afterward to finish the edge. You'll notice an immediate and incredible difference.
