I'm a chef. Mostly a home cook these days, but occasionally I still do something in the professional arena. But my knives are my tools of the trade - an extension of my hands, if you will. And I really needed to find someone new. I wasn't sure how I was going to do this until I was at an Elite event the other day and it turns out the musician happened to be a bladesmith by day. Lucky me! Danny and I spoke for a bit and by Monday, he was at my house taking care of my knives for me. So here is the deal - he is mobile - 100%. He comes to you, so you are not without your knives. He sets up shop in his truck - and sharpens your knives while you go about your day. What's better than that? Sure, you can take your knives to the local kitchen store and be without them for a week, but why? Danny comes to your house. The beauty is that there is not a set up fee, or a "call" fee. He charges you per inch - so how ever many knives you have and however long they may be - that's what you pay. And that is how it really should be. And at the end of the day (okay 3 hours for 15 knives and 5 pairs of scissors) - my tools were returned to me super sharp and beautifully polished. So I am not a professional cook, but I have some really nice (and expensive to me) knives. I cook a lot and I have some pretty proficient knife skills. This is why I absolutely must have properly sharpened cutlery. When I travel to friend's homes with an invite to cook or travel home for the holidays, I often times end up cooking a few meals at mom's or grandmom's or cousin's. I always travel with my knives in a roll, because not everyone is as fussy (read: OCD) about their cutlery as I am. I have been to homes and tried cutting bacon with dull serrated knives. This is why they roll. So after years of sending my knives to Whole Foods, or using a diamond stone ALL FRIGGIN DAY Saturday afternoon, I decided I would seek out a professional. Not that Whole Foods was all that bad, just not all that good. And if I can do it better, you best believe I won't pay someone else to do it. So I happen upon Atlanta Knife Company. It wasn't scientific and I am ashamed to write that I didn't even consult Yelp; well, not right away. I gave Danny a call and he got to me within a few hours same day. The wife was home, so I relayed to her which knives and shears to give to Danny. It just so happened that I told her one extra that I had not told Danny about on the phone. No matter...The wife told Danny we had one extra and Danny didn't charge me for it. And the price he did charge, on a per inch basis, was beyond reasonable. Danny put a hair cutting edge on each blade, and even polished up the cheeks to mirror finish. He simply did an awesome job. Having well sharpened blades on cutlery isn't just for convenience, it's also for safety. Have used the Bladesmith in the past with mixed results (via Cooks Warehouse), so decided to try someone else, so settled on AKS....met Danny on Laredo Drive with assorted chef's knives for sharpening ....Danny is a very nice man and worked on my knives immediately....I have Shun, Global, Wusthof, and Henckel knives....if you don't want him to take off all markings from the factory, you need to tell him! Nevertheless, he does do a good job, albeit, an expensive one...the only complaint I have is that the edge he puts on the knives is not super sharp, it is more of a "durable" edge...whereas my Shun would slice a tomato with ease even before Danny sharpened it, afterwards, it would not do the same job....same with 2 paring knives....again, Danny does a good job and is great at customer service (as he offered to have me come to his house and he would re sharpen them for me) but I question the edge he put on all of my knives....just make sure you check your blades throughly before you leave, ask for a sharper angle, and IMO, don't let him polish all the markings off your blades, although that is a personal choice.... As an addendum to my review above, I wanted to respond to the reviewer from 5/02/2017....when you pay around $175 for 10 knives to be sharpened, the blades polished and the markings buffed off (don't have this done if you use him, IMHO), you should not have to "spend some time with a razor strap finishing your edge"...it should be razor sharp as a RESULT of taking it to someone to sharpen! Spend that money for a blade that is not finished and you have to "finish" it yourself?? BTW, I got the CD also and I appreciate that, but it was little consolation for being disappointed with the sharpening job...the guy at Atlanta Knife seems to be a nice person, but I wasn't paying him for personality or musical ability, only to sharpen my knives...I'm using Bladesmith (Cook's Warehouse) again and have a great sharp edge once again.... read more

I own two Japanese Gyuto both High Carbon Steel and SS I was very hesitant about bringing my knife to a local place since these are Japanese and was thinking about sending them back to Japan and getting them finished. Due to the return time I was quoted I decided to give AKS a shot after reading the reviews. I arrived to Danny's home right of the bat he was standing outside with a smile on his face and was very welcoming. After showing him my knifes he said with confidence he could bring them back to life which makes you feel at ease when talking about very expensive knifes. He showed me his equipment and explained everything he's going to do before he started again putting me at ease. He then proceeded to sharpen my knife and continued a conversation which I felt like I was there as a friend not a client which is always great! After he finished sharpening he polished them and I could instantly see major difference and true to his word they are as sharp as a razor and held a blinding mirror finish. I will definitely be back and now I have the confidence to buy more high end knifes and have a friend I can count on to keep my arsenal in check! I've always hesitated getting my Berti Coltellerie knives sharpened because of the inconvenience of dropping them off and risk damage through handling. Atlanta Knife comes to you! All my kitchen knives are now very sharp again, and were returned to me in the same condition in which they were received. I also appreciated that Danny only worked on the cutting edge, and preserved all the markings and initals of the knife maker. You need to specify this though. Danny came to our house to sharpen 6 Shun and 2 Cutco knives. He was very professional and worked about 3 hours in our driveway. Our knives needed the TLC badly and now they are better than new! Two of them had tips broken off and Danny put new ones on. He treats the wooden handles as well and they look fabulous. His pricing is very fair for the time is takes him to travel to your house and the labor involved (you also get your knives back the same day). I could have taken them to ACE for $5 a knife, but you get what you pay for with Danny Ray Cole, which is excellent service and a supreme knife sharpening master skill set. Danny Ray was wonderful. At the last minute I called him and he accommodated me with out issue. I went to him as my schedule was so chaotic that I didn't want to subject anyone else to its craziness. Though I only had 1 knife to be sharpened he treated me like I had an entire set. Not only was him customer service impeccable, he is so friendly, he gave me tips on preventing dulling the knife prematurely.
