It's warm and inviting. It's also aptly named because anyone who grew up in Salem knows that Gallows Hill was the place to go drink. Behind the bar is a replica of Salem's Witch House and there is a replica of the sign by the door, which really provides that Salem feel. The decor provides an overview of the Salem Witch Trials, including naming those who were murdered, which is important. We ordered two drinks, both of which were excellent. Next time we return, we'd like to taste some of the spirits individually. We met with Robert, the proprietor, for a tour, and he provided a high-level yet comprehensive overview of the trials. He started this distillery because he is descended from one of the executed and during the tour, he shares his familial connection and how he discovered it. Robert is very friendly and welcoming. It's wicked cool to find some of Salem outside of New England, especially in my partner's home area, and especially a place that takes our history seriously and shares the truthful version. The delicious drinks are a fun bonus. You absolutely must visit this distillery when in/near the Lehigh Valley.

They set everything up in a week and did a great job. For that short amount of time you'd think there would be some issues. But our experience was great and the staff was tired but still very friendly and on top of everything. At one point the chairs were complete full along with a few standing and they made sure everyone had a drink and made rounds and conversed with all. Even though the GM isn't a fan of Yelp they were all so awesome I have to leave a review haha They have some awesome things in the works! He let us taste a balsamic gin cocktail he's working on adding to the menu. Not a huge fan of gin and it was pretty coriander forward. But I am a huge fan of balsamic which balanced it out and made for a delicious drink. They're also going to be working with Little Miss Korea on an upcoming brunch drink! Fruit flavored vodkas, rum, gin, and most importantly rye whiskey and bourbon. Not a huge number of cocktails but a few different options featured to keep everyone happy. There are a few beers on tap that sound like a rotation of local options. Cocktails: Sazerac $9 - Rye Whiskey Great blend of whiskey and absinthe. The natural sugars and specialty bitters meld the two together nicely. Derby Mule $9 - Bourbon A good bourbon mule but nothing amazing. If you like mules, you'll be satisfied. Standard drink but there's more creative options to explore. Smoked Old Fashioned $12 - Bourbon A crowd favorite providing a great visual. They smoke wood in front of you on a platter and capture it in your glass before adding the cocktail. The ratios are spot on and don't skimp out on the liquor. But I could definitely drink 3 of these in the one glass. Stong but small. Other notes: Staff was friendly and happy to explain their fresh hand crafted drinks. They played a fantastic playlist of music once the other vendors around them closed. The staff didn't keep you waiting to order drinks. Would return.

Overall, the bill wasn't too expensive either. However, the ambience is majorly lacking for how cool the historical building looks from outside. That was a big let down after years of seeing this in passing. It feels too much like a 90s coffee shop from Friends / a poorly converted modern bank lobby with the lighting, and the floor layout lacks flow if you're sitting at the bar. It would be an improvement to see historic qualities restored to the interior, rather than bland sheet rocking, no crown molding, etc. Aside from this, we found the music to be a very distracting and random selection of early 2000s dance, pop, EDM, emo, and rock, mixed with the occasional alt rock hit that was (finally) tolerable enough to fade into the background. The room is vacuous because of the high ceilings and hard building materials, so turning the volume down a little and choosing something consistent in tone (perhaps neo soul or just sticking to alt rock) would be beneficial for the overall atmosphere. Bottom line: would return again for the food, but the atmosphere wasn't what we expected and could be improved for a cozier, vintage styled atmosphere (but that's mostly a matter of preference). Friendly service, affordable prices, and good eats go a long way.
